Happy 2nd Anniversaryi bought a can of dulce de lechey (i know i know.. I spelt it with a punt) from Uruguay during my last trip in February and never put it to use.. it’s one of those things you buy, put in the fridge and go “OMG, i didn’t realize I had this”… since I’d decided to participate in the fun of Bake Along Anniversary, I’d decided to bake some dulce de leche cupcakes…

Dulce de leche Cupcakes (recipe adapted from Confections of a Foodie Bride)

Original Recipe (makes 24 cupcakes)
1 can Dulce de lechecelebration cupcakes
2 sticks butter at room temp
1 1/3 cup sugar (I halved this)
4 eggs
2 tsp vanilla
3 cups flour (I used cake flour)
1 tbsp baking powder
1/2 tsp salt
1/2 cup buttermilk

Instructions
– preheat oven to 350 degrees F
– line 2 muffin pans with paper liners
– cream butter and sugar on med-high for 4-5 mins, scarping down the sides of the bowl a couple of times, until light, fluffy and no longer grainy
– Scrape down the bowl and add 1/2 cup of dulce de leche, mixing on medium for another 1-2 mins until thoroughly incorporated
– Add eggs in one at a time, making sure they are well incorporated
– Stir in vanilla
– Add in flour in 3 additions, alternating with buttermilk
-Scoop batter into lined cups, filling 2/3 – 3/4 full
– bake 15-18 mins or until lightly browned and a skewer in the center cupcake comes out clean (I baked 18 mins)
– let cool 10 mins in pan and then turn out onto rack to cool completely
– frost as desired

    Hi Victoria, nice to know you through Bake Along! Your cupcakes are so pretty! You\’re really talented with fondant, I don\’t like to eat fondant so I\’ve never use them to decorate cupcakes… prefer to go for the frosting look haha!

    • Hello Jasline, thanks ~ u r definitely right.. we don\’t like the taste of fondant too but I\’m not too gung ho with frosting.. hahaha… with those little details, i think my hands will shiver quiver…. @_@
