banana crumb muffins

 

i had 6 overripe bananas hanging in the kitchen but am feeling slightly under the weather these couple of days… but i needed to just use it before they start to produce gas… so i decided to use one of my all time favourite banana crumb muffins recipe (nothing goes wrong with a recipe that’s so well rated by so many readers..) .. muffins are so simple… and my goal today, is to bake them into one of those Starbucks look alike muffins.. you know, with that big mushroom head (i.e. domed shape muffins/cupcakes)

INGREDIENTS:

Muffinsbanana crumb muffins
1 1/2 cups of all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted

Streusel topping
2 tbsp all purpose flour
1/3 cup packed brown sugar
1/8 tsp ground cinnamon
1 tbsp butter

Directions:
– preheat oven to 190 degrees C and lightly grease 10 muffin cups or line with muffin papers
– in a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups
– in a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins
– Bake in preheated oven for 18 – 20 mins or until toothpick inserted into centre of muffin comes out clean

Personal notes:
– per other reviewers, I added 1 tsp vanilla extract, 1/2 tsp grounded nutmeg, and 3/4 tsp cinnamon to the muffin batter
– i used a total of 1/3 cup of sugar (half of it white sugar, the other half brown sugar)
– increase cinnamon to 1/4 tsp for crumb topping
– for doomed shape muffins – i preheated my oven to 220 degrees C and sat my prepared batter on kitchen table for around 10 mins (after spooning into muffin tray)
– please ensure your batter is sticky, and not runny and thin
– i filled the muffin cups to the brim
– i baked the muffins at 220 degrees C for 6 mins (next time I’ll try 8 mins) and then at 190 degrees for 10 mins
– i inserted paper straws into the dome .. don’t they resemble a nice Starbucks frappuccino? (pss.. i bought my baking tray from Ikea… they resemble the shape of an ice cream cone base)
