Recipe adapted from Frozen Wings
Ingredients (makes 24 mini muffins)
187 g all purpose flour (i used cake flour)
1/8 tsp baking soda
1 1/4 tsp baking powder
1/4 tsp fine sea salt
1tbsp buttermilk ( i used greek yogurt )
110ml full cream milk
56g unsalted butter, softened
60g sugar
1 large egg
finishing
56g unsalted butter, melted
1/2 cup sugar mixed with 1/2 tbsp ground cinnamon

普通面粉 187克(我用了蛋糕粉)
苏打粉 1/8小匙
泡打粉 1 1/4小匙
海盐 1/4小匙
酪乳 1大匙(我用了希腊酸奶)
全脂奶 110毫升
无盐黄油 56克、软化
糖 60克
鸡蛋 1大颗
收尾
无盐黄油 56克、溶化
肉桂粉半大匙混合于半量杯白糖
Directions/做法
– Position a rack in the lower third of the oven and preheat oven to 177C. Grease and flour the muffin pans
将烤箱铁架摆放在烤箱倒数第三层,将烤箱预热至 177摄氏度。马芬烤盘抹油、撒上少许面粉
– Sift together the flour, baking soda, baking powder, salt . In a medium bowl, combine the milk and the buttermilk or yogurt
面粉、泡打粉、苏打粉和盐过筛。另一个容器中将牛奶和酪乳/酸奶混合
– Cream butter for 2-3 mins using a handheld mixer on medium speed. Reduce to low and gradually add in the sugar. Continue to mix until mixture lighten in colour
将黄油以中速搅拌 2-3分钟。转至中速、慢慢加入白糖。继续打发至到黄油变浅色
– Add the egg, beating until just combined. Add the dry ingredients in 3 batches, flour, milk and flour mixing just until smooth , do not overmix
加入蛋液,拌匀。干性食材分三次拌入~以面粉、牛奶、面粉的词序加入黄油糊,搅拌均匀。切勿过度搅拌
– Scoop the batter into the prepared muffin tray, filling approx 2/3 . Bake for 20-25 minutes, until the tops are firm and lightly golden. While the muffins are baking, prepare the melted butter in one bowl and the cinnamon sugar in another bowl. Let the doughnut muffin cool completely on a wire rack, dunk them in the melted butter, then coat them with cinnamon sugar
将面糊勺入烤盘至三分之二满。烤 20-25分钟至到顶部感觉结实、并均匀上色。烘焙马芬当儿,准备溶化黄油和肉桂粉糖。出炉后,将马芬完全冷却后,沾上溶化黄油并过上肉桂糖即可
Personal notes/温馨小贴士:
– i filled the batter all the way to the brim and baked 12 mini muffins and 4 small “cars”
我将面糊勺至满模,做了 12个迷你马芬、“四辆小车”
– i baked mine for 12 mins
我的马芬烤了 12分钟
– after cooling, i brushed the top with melted butter and sifted cinnamon sugar mix onto the top of muffins only
马芬冷却后,我将马芬顶部刷上溶化黄油并筛上肉桂糖
the “kosong” (plain) ones that went into my stomach (^_-)≡★
