homemade luncheon meat

i always find myself stuck with 2 eggwhites after making my favourite bread. i’d decided to make something totally new… and since i’m venturing into cooking (oh yes, i’m trying to master the singaporean style char bee hoon), luncheon meat would be good.

i never allow canned luncheon meat in the house since the last luncheon meat scare in China.. plus, it really isn’t that healthy. but after i saw this recipe, i had to make this…

Original recipe adapted and translated from Bean Panda

Ingredients

350 pork neck/shoulder meat
60g egg white
15g corn starch
15g cake flour
1 tbsp water

Seasoning

1 tbsp light soy sauce (feel free to adjust this to your liking)
1 tsp sugar
1tsp five spice powder
1 tsp red yeast powder (for the colour ~ can be omitted)
1 tbsp ginger juice (do not omit)
2 tsp sesame oil
white pepper (as desired)

Directions

homemade luncheon meat– place meat into freezer till it is slightly hard. Remove from freezer and mince it up manually. Do not use food processor as it will affect the texture
– add seasoning ~ light soya sauce, sugar, five spice powder, red yeast powder, ginger juice, sesame oil, pepper. Marinate meat well
– add in half of the egg white. at this point, it is normal that the meat will clump. just mix it slightly, and add in corn starch. Incorporate well
– add in remaining egg white. Mix slightly and add in flour, and lastly with 1 tbsp water. Mix for 1 minute till meat is slightly sticky but will not stick to the bowl (please ensure that the seasoning, egg white and flours and added in the instructed manner)
– grease a glass tupperware lightly and add in meat mixture in 3 additions, pressing air out after each addition
– bowl water in steamer over high heat and place tupperware into steamer. Ensure you have a lid on the tupperware when steaming as the meat will puff
– steam for 40 minutes
– remove luncheon meat from tupperware and allow to cool before slicing. Serve as it is or fry as desired
– luncheon meat can be kept in fridge for 3-4 days

Personal notes:

luncheon meat
– i used minced chicken breast meat as i don’t take pork ~ and it is more healthy that way (that’s why we make our own luncheon meat ya? ヾ(@^(∞)^@)ノ)
– i had a slightly larger tupperware and i steamed mine for 35 mins
– i added slightly lesser than a tablespoon of soy sauce and thought the saltiness was ok that way
