coffee swiss rollsuddenly felt like painting the “Guxxi” logo onto my swiss roll.. unfortunately, the design did not come out well. i had to be very careful not to paint the designs too thin as they will crack easily when i remove the parchment paper from the design after baking… and the result? the alphabets look more like E than G…. sigh… oh well… _φ(°-°=)

Recipe (makes a 25 x 25cm swiss roll)

Ingredients 

3 eggs separated
65g caster sugar (separated into 35g and 30g)
60ml water
40ml salad oil
1/2 tsp coffee mocha essence
1/2 tsp coffee paste
80g cake flour (sifted)

filling (recipe from Food)

6 tablespoons butter, softened
2 2/3 cups confectioners’ sugar
1/2 cup cocoa
1/3 cup milk
1 1/2 teaspoons vanilla

Directions

coffee swiss roll– beat egg yolks with 35g of sugar. Add in oil, water and coffee mocha essence and coffee paste, Mix well and set aside
– beat egg whites till frothy and add in sugar in 3 additions. Beat till stiff and shiny peaks
– take 3 tsp of egg yolk mixture, and add in 1tsp of dark cocoa powder, and 1 tbsp of egg white. Mix well and pour mixture into paper cone for painting design
– fold in remaining egg white meringue to yolk mixture in 3 additions
– bake design in preheated oven of 170 degrees C for 1 min
– pour the rest of the cake batter onto pan and bake for 20 mins
– cool cake after baking. meantime, prepare buttercream
– place butter in a bowl and beat until creamy
– add sugar and cocoa, mixing well
– Stir in milk in portions, stirring each time
– add vanilla
– spread on cooled cake
