i was so excited when i found pandan leaves in an expat market… and so i bought the lot… like 20 (nothing to you eh, but eiiii… it’s a gem here u know (。 >艸<))
i was quite a failure here.. if you take a look at my history, i never allow my huat kuey to huat… mmm, maybe because i like to decorate on ’em and if they huat, i will not know what to do with it? (◎-◎;).. anyway… as you can see here, some of my huat huey here, were actually trying to huat despite me controlling the heat….
Recipe adapted from Nasi Lemak Lover
Ingredients
250g self-raising flour
1/2tsp baking powder
150g caster sugar (can be reduced further)
1 egg (large), lightly beaten
200ml pandan water (blend 6pcs pandan leaves with water)
45g corn oil
Directions
– Mix self-raising flour and baking powder, set aside
– Whisk sugar and pandan water till sugar dissolved
– Add in egg and corn oil, stir to mix well
– Add in flour and stir to combine
– Pour into prepared cupcake liners
– Steam over high heat for 20mins
Personal notes:
– i halved the recipe and used 65g of sugar for cakes
i have to say these steamed cakes are really delicious… we couldn’t stop at one ~(^з^)-☆
