yes, finally… after bookmarking this for a year…. i finally made this. (☆´3`) i wonder what took me so long to make this lovely cake… my failure was i had a pound cake crack at the top because i halved the recipe and attempted to bake it in a mini pan (i wanted really small cakes for tea….).. nonetheless, the cake was lovely.. crisp on the outside, and really soft and yet fine crumbly on the inside..(づ。◕‿‿◕。)づ
Recipe adapted from Table for 2
Ingredients (makes an 8-inch square pan cake)
230g butter (salted), softened (cool at 18-20 degrees C, not glossy)
200g eggs, no shell (4 grade B eggs)
50g + 150g sugar
200g self raising flour, sifted
60ml milk
1 vanilla bean, seeds scraped (or 1 tsp vanilla extract)
Directions
– preheat oven to 180 degrees C (conventional) (I only use 170 degrees C) . Prepare an 8 inch square pan. Line the base and grease the sides (greasing helps the cake’s sides to rise well)
– separate the eggs, and place egg whites into a medium sized bowl. Beat whites till soft peaks, and gradually add 50g sugar. beat until stiff. set aside
– cream butter and 150g sugar until pale and fluffy (KA speed 2-4). put in vanilla seeds and beat for a while. Put in egg yolks one at a time, beating well after each addition
– put in half the flour and mix on low speed until incorporated. put in milk in 2 additions and mix until well incorporated. mix in the remaining flour
– put half the egg white in and mix on low speed. pour the balance of egg whites in and fold
– pour batter into pan and level
– bake for 45 mins or until skewer comes out clean (i reduced to 150 degrees C for the last 15 minutes because the top seems to be getting dark)
Personal notes:
– i baked my cake for 38 minutes under temperature of 170 degrees C
– i used concentrated vanilla extract instead of normal vanilla extract
my friends are absolutely raving over this mini cake…
