cream cheese cookiesone moment i can’t find cream cheese, next moment i hv expiring cream cheese …. | (• □•) | (❍ᴥ❍ʋ) such is baking life… i am  always stuck with either no ingredients or expiring ingredients… 救命啊。。。 (⊙ヮ⊙)

Ingredients (makes 12 rectangle L7 x W2 cm cookies)

cream cheese cookies125g cake flour
20g almond powder
40g sugar
1g salt
50g cream cheese
50g unsalted butter
3g vanilla extract

Directions

cream cheese cookies– cream both butter and cream cheese and add in sugar and salt. mix till well incorporated and then add in vanilla extract
– sift in cake flour and almond powder in 2 additions and fold well with spatula
– chill dough for 30 mins and then roll out between 2 pieces of cling wrap till dough is 1cm in thickness, and 7cm wide
– chill dough once again for 30 mins, and then from the length (longer) side, slice dough into 2cm slabs. place cut dough onto baking sheet and prick holes with toothpick
– bake for 15mins in preheated oven of 170-175 degrees C

Personal notes:

cream cheese cookies– i cut my cookies into mini triangle shapes and cut out holes using piping tips so they resemble cheese
– i did not chill my dough after mixing as the kitchen was cool enough. i chilled them (for 15 mins) only after shaping, and just before baking
– my cookies were baked for 10 mins in 175 degrees C oven
