taking a brief break from the CNY goodies baking today because i need to clear out my fridge… ₍₍ ◝(・ω・)◟ ⁾⁾
Recipe adapted and translated from Qi Qi in the House
Ingredients/食材 (makes six 60g buns)
180g hong kong flour (all purpose flour is fine)
20g wholemeal flour
3g instant dry yeast
pinch of salt
100g fresh milk
35g caster sugar
1tbsp lard
3/4 tsp double action baking powder
Filling
240g red bean filling (divided into 6 portions of 40g)
水仙粉 180g(亦可用中筋面粉)
全麦面粉 20g
速溶酵母 3g
盐 一小撮
鲜奶 100g
细糖 35g
白油 1 tbsp
Directions/做法
– mix all ingredients (EXCEPT BAKING POWDER) and knead for 8-10 mins till you get a soft and non-sticky dough
所有材料(除双倍发粉外)混合拌匀,搓揉8-10分钟成光滑不黏手面团
- allow to proof in room temperature till double in size (around 1 hour)
室温发酵1小时至双倍大 -
mix baking powder with 1 tsp of water and dissolve. add it to the above dough and knead till well incorporated
双倍发粉用1小匙水调匀,加入面团中再度拌匀至光滑 -
rest dough for 15 mins
休面15分钟 -
divide dough to 6 equal portions (60g each) , shape into a ball and roll into a disc. place filling and seal seams
将面团分割为6份/60g 一个,滚圆;杆开,包入40g馅料 -
place buns into steamer and allow to proof for 45 mins
排入蒸炉,再度发酵45分钟 -
steam buns on medium-high heat for 15 mins
中大火蒸15分钟 -
once time is up, do not open lid immediately. allow buns to sit in it for a while as a rush of cold air will cause the bun to wrinkle
时间到即熄火,但别马上打开锅盖,热腾腾的包子与炉外的冷空气猛然接触,会让包子变皱

– i halved the recipe and make six 30g buns

- shape cat according to following diagrams after placing filling and sealing seams
裹入馅料后,请参考以下肥猫包子整形图解
punch a dimple on both sides of the dough
裹入馅料的面团收口,封口朝下。面团顶部两侧捅个小孔
“affix” pinchful of dough into the dimples and make impressions on the ear with fondant modelling tools
随意捏点剩余的面团,整形成🐱耳朵,插入小孔,再用翻糖模具在耳朵上压上条纹
next, use the base of a large piping tip to make quarter circles as impressions for the eyes
运用一个大型裱花嘴的底部,在面团上轻微压上四分之一圆形。这就形成了猫咪的笑眼
this is what you should get
此时的猫咪应该是这个样子滴
make a small dent on the face
笑眼中间部位压个小孔
… and place a red bean on the dent. this will form the nose. i’d have used azuki bean instead of raw red bean but i ran out of it
在放上一颗红豆。也可用蜜红豆
finally, draw expressions with cocoa batter (mix egg yolk with a tsp of cocoa powder) using a toothpick
最后,用牙签粘上可可浆 (打散一颗蛋黄,在混入一小匙可可粉拌匀即可),画上猫咪的嘴巴和胡须
… it’s dim sum time (≚ᄌ≚)ℒℴѵℯ❤
