madeleines are something i had wanted to bake for a long time ~ but since i don’t have the mould, i’d never gone into baking it… and since i don’t bake it, i never gone about buying the mould (*-ω-)… sigh… chicken and egg thing… 人真是拿来折腾。。。 so yes, i confess, this is not baked in a madeleine mould… i love this recipe because it is sooo fast.. like 30 mins from preparation to serving ༼ (´・ω・`) ༽
Recipe adapted from Cooking Channel
Ingredients (makes 12)
1 cup plus 2 tablespoons (or 150g) flour
1/2 teaspoon baking powder
Pinch salt
2/3 cup plus 1 tablespoon (or 150g) butter
1/2 cup plus 2 tablespoons (or 125g) sugar
1 tablespoon brown sugar
1 tablespoon honey
Zest of 1 lemon
4 eggs

面粉 1杯+2大匙(或 150克)
泡打粉 1/2小匙
盐 1 小撮
黄油 2/3 杯+1大匙(或 150克)
糖 1/2 杯+2大匙 (或 125克)
黄糖 1大匙
蜂蜜 1大匙
柠檬皮 1颗
鸡蛋 4颗
Directions/做法
– Grease madeleine tins and set in the freezer. Heat the oven 400 degrees F/200 degrees C
玛德琳模子抹油、冷冻。烤箱预热至 400华氏度/200摄氏度
– Sift together the flour and baking powder
面粉和泡打粉过筛
– In a small saucepan melt the butter, and stir in the sugar, honey and lemon zest
奶锅里将黄油溶化。拌入糖、蜂蜜和柠檬皮
– Lightly beat the eggs, and temper them into the butter mixture
鸡蛋打散、拌入以上黄油糊
– Whisk into the flour to make a smooth batter
加入面粉,拌至无颗粒
– Pour into the molds and bake until the cakes are puffed up, golden around the edges and cooked through, 10 to 12 minutes, without opening the door during cooking
倒入模子,烤纸蛋糕膨胀而边缘变金黄色~ 约 10至 12分钟。烘烤过程中千万不可开炉门
Personal notes/温馨小贴士:
– i halved the recipe and made 6 madeleines. i used coconut sugar and orange zest for the recipe
我将食谱减半、做了 6个玛德琳。黄糖以椰子糖替代;柠檬皮以橙皮替代
– i do not have a madeleine mould and used a normal lemon shaped pan to bake these
我家木有玛德琳烤模。这次是用了一个柠檬形烤模
– i baked mine for 13 mins
