IMG_6698just as i was at a lost of words for this post, i received a wechat message from my sister in singapore… she said her daughter, my niece, said i look like Beyon*e (or maybe she meant resemblance) … (。-_-。 )人( 。-_-。) .. i googled her picture again… and was thinking.. ayyy.. not bad looking eh… then.. my sister followed up with another message.. because she has a big bxtt…….。:゜(;´∩`;)゜:。

Recipe adapted from Rumbling Tummy

Ingredients (makes 31 cookies)

110 g unsalted butter
115g castor sugar
43g brown sugar
1 large egg, beaten
1 tsp vanilla extract
170 g plain flour
½ tsp bicarbonate of soda
½ tsp salt
175g unsalted macadamia nuts, roughly chopped
225g white/plain chocolate, chopped

食材(可做 31个曲奇)

110克无盐黄油
115克绵白糖
43克黄糖
1颗打鸡蛋,打散
1小匙香草精
170克普通面粉
1/2小匙苏打粉
1/2小匙盐
175克无盐夏威夷果仁,切成大颗粒
225克白巧克力,切碎

Directions/方法

IMG_6706– Preheat oven to 190°C. Line a large baking sheet with baking parchment
烤箱预热至190摄氏度。烤盘上扑上油纸

– Cream the butter and sugars together until well combined and slightly fluffy. Stir in the egg and vanilla extract
将黄油和糖放入容器中,打发至蓬松状态并发白,加入鸡蛋和香草精。拌匀

– Sift the flour, bicarbonate of soda and salt.  Add into creamed mixture and stir in until a soft dough is formed
筛入面粉,苏打粉和盐。搅拌至均匀


– Add the chopped nuts and chocolate chips and mix till they’re evenly distributed
拌入果仁和巧克力碎,拌匀为止。切记不可过度搅拌

– Using a small ice cream scoop, drop the dough onto the lined baking sheet
使用小型冰淇淋勺,将面团整齐的勺到油纸上

– The cookies will spread, so leave 2″ gap between each ball
因曲奇在烘焙过程中会融化并散开,所以比需在每颗曲奇面团之间预留2寸空隙

– Bake for 8-10 minutes until lightly golden brown
将曲奇烤8-10分钟或至金黄色即可

– Cool one minute on the sheet; transfer to a wire rack to finish cooling
从烤箱取出曲奇后,先让曲奇在烤盘上逗留一分钟,在挪到冷却架上让曲奇完全冷却

Personal notes/温馨小贴士:

IMG_6700– i used a 1 inch cookies scoop and made 65 cookies
我用了一寸的曲奇勺,做了65个曲奇

– i used a total of 77g sugar ~ 34g castor sugar, and 43g organic coconut flower sugar
我将糖份减至77克 ~其中用了34克绵白糖,和43克有机椰子花糖

– i slow baked my cookies for 15-18 mins in 160 degrees C oven
我喜欢慢速烤曲奇,所以用了160摄氏度的烤箱,将曲奇考了15-18分钟
