IMG_6842i have never steamed cakes before because you may well know that i burn anything that has to do with the stove.. but when ah bu saw this on Eileen’s blog, she told me she really wanted me to make this… (●__●)… steam… ok….. but i am glad i made this! it is simple and so good.. kinda reminds me of the Awfully C brand cake…

我从来对蒸蛋糕没啥感兴趣。。说到蒸东西这玩意儿。。嘿。。别搞。。家里蒸锅被我烧坏了无数个。。 可当阿母在长腿美女家看到这帖子时,就马上要我给她做。。。(*¬*)。。。 七上八下的心情还是做了。。。 天助我也!成功成功。。。不费事的蛋糕🍰,就出炉了。。。好吃!👍!

Recipe adapted from Eileenの记事本 

Ingredients

A
180g butter
150g caster sugar
200g full cream evaporated milk
1/2 tsp vanilla extract or 1 tsp vanilla essence
1 tbsp of rum (optional)

B
2 eggs, slightly beaten with fork

C
100g plain flour
50g cocoa powder
1 tsp baking powder
1/2 tsp baking soda

Chocolate Fudge Topping
200 g condense milk
1/2 tsp vanilla extract or 1 tsp vanilla essense
2 tbsp corn oil
20 g cocoa powder, sifted
a pinch of salt

食材

A
无盐奶油180克
细砂糖150克
200克淡奶
1/2小匙香草精
1大匙朗姆酒

B
2 颗蛋(稍微打散)

C
面粉100克
可可粉50克
1小匙泡打粉
1/2小匙苏打粉

巧克力淋面酱 (我用了愿食谱淋酱)
炼奶200克
1/2小匙香草精
2大匙粟油
可可粉20克,过筛
盐,一小撮

Directions/做法

IMG_68391) put all (A) ingredients into a saucepan, and stir over low heat until sugar has dissolved and butter has melted. remove from fire and allow to cool
将材料A放入锅里,小火搅拌至糖及奶油溶化,熄火,稍微冷却

2) Add (B) (beaten eggs) into (A) and stir till well mix
把材料B倒入做法1)里,混拌均匀

3) sift (C) into a mixing bowl and
将材料C筛入盆里,再把做法2)倒入,搅拌均匀

4) pour batter into a greased and lined 8 or 9 inch round baking pan, and cover loosely with an aluminium foil. steam over medium heat for 45 mins
把面糊倒入铺纸的模型里,再用铝锡纸盖上,以中火蒸约45分钟

5) cool cake in pan before turning out for decoration
待蛋糕冷却才脱模

6) prepare fudge topping by combining the sifted cocoa powder, condense milk and oil
准备巧克淋面酱 ~ 过筛可可粉,炼奶,和油放入汤锅

7) Stir over low heat till thicken
以小火加热,之间不断搅拌至浓稠状态,熄火

8) Add in salt and vanilla extract or essence
加入盐和香草精。拌匀

9) Cool the chocolate topping a little before spreading on the cake
巧克力酱稍凉后,抹在蛋糕上

10) Refrigerated before serving cake
冷藏后便可使用

Personal notes/温馨小贴士:

IMG_6841– i baked my cake in a 6 inch square pan, and used only 135g sugar for the cake
我用了6寸方形烤盘烤了蛋糕 ~ 蛋糕食材的糖份减至135克

– i used organic coconut oil for the fudge topping
巧克力淋面酱用了有机椰子油替代

– i sliced my cake into half as ah bu wanted 2 layers of chocolate topping and i swirled the topping a bit after it harden to give it some wave
阿母喜欢两层巧克力淋面酱,所以我将蛋糕破半,在半个蛋糕上抹上巧克力酱。收尾时,待顶部巧克力面酱有些凝固后,在用叉子稍微拉上波浪纹路

    With your Ah Bu around, it certainly gives you lots of confidence and motivation. Im sure more cakes and kueh to come, right? And, I loves anything chocolate and more so steamed chocolate cakes, it sure does makes the cake dense, and moist. Yum.

    I tried this recipe before, I love it too even without any chocolate topping. Yours confirm more tempting as it got 2 layers of chocolate topping. Simply sinful delicious!

    Hey Victoria,

    I love your blog and your recipes! Always so inspirational. Made this cake some time back. I have no complains except that it turned out really crumbly. Would you know the reason why? Also, does it matter if I used Dutch processed or natural cocoa powder?

    • Thanks Luvena. Did you over steam your cake? Steaming times may differ depending on the heat of your stove. Also, Dutch process and normal cocoa powder cannot be used interchangeably. Dutch process cocoa powder is usually used in recipes with baking powder as its acidity has been neutralized. DP cocoa powder does not react to baking soda as normal cocoa powder does.

      Note this recipe uses both baking powder and baking soda. Baking powder as we all know is one third baking soda and two thirds other ingredients. If you use DP cocoa powder, you may get some rise, but not enough. There may even be a chance that the batter may quickly rise then fall before the bubbles had a chance to bake in. Either or, your result will not be good.

      Hence, unless stated specifically, always stick to normal cocoa powder. Hope this helps

        Thank you for all the information! Seems like I may have over-steamed it.

        I\’ve read from somewhere that natural cocoa powder cannot be substituted with DP cocoa powder. Unfortunately, finding natural cocoa powder where I live is like looking for a needle in a haystack. Sad truth. Since that\’s something beyond my control, is there a way to use DP cocoa powder in recipes that call for natural cocoa powder?

  • Hello Luvena, ok, not guaranteeing any results, but try substitute cocoa powder with your DP cocoa powder one for one, and replace baking soda with twice the amount of baking powder. I think this may work if my memory don\’t fail me 🙂

  • 甜度依照个人口味,咋们家也不爱甜食,就爱微甜。所以我就加了135克。。。我觉得100克有点偏低,不过要是你们家接受得了,那也无妨 :)
