made this especially for my ah bu as she loves anything coconut.. ( ^ω^ )
特地做给阿母吃滴。。阿母最爱椰子口味儿
Ingredients (makes 20 pcs)
Crust
364g flour
224g soft butter
98g icing sugar
1 egg
some vanilla essence
Coconut filling
42g sugar
1 egg
28g flour
56g grated coconut
28g evaporated milk
14g melted butter
2g baking powder
Decoration
3-5 pcs sliced cherries
挞皮
面粉364克
软化黄油 224克
糖霜 98克
鸡蛋 1颗
香草精少许
椰蓉馅
糖42克
鸡蛋 1颗
面粉28克
椰丝56克
花奶28克
融化黄油14克
泡打粉 2克
收尾
3-5粒切片车厘子
Direction/做法
– prepare crust by creaming soft butter and icing sugar. add in egg followed by the remaining ingredients. knead lightly to form dough
软化黄油和糖霜拌匀,加入鸡蛋拌匀,然后用手把其他材料陆续拌入,轻轻搅均成团
– prepare coconut filling by mixing all ingredients together
准备椰子馅 ~ 将所有材料拌匀成糊状
– cut crust and place into mould, then add in coconut filling. bake in preheated oven of 190 degrees C for 15 mins. Top with cherry slice
挞皮按入挞模上,再将椰馅放入做好挞皮内,放进已预热至190摄氏度的烤箱烤约15分钟。椰挞出炉后摆上车厘子装饰即可

-i used freshly grated coconut, organic coconut flower sugar and organic coconut butter for the filling
馅料中的椰丝,糖和黄油,我用了新鲜椰丝,有机椰子花糖和有机椰子黄油替代
– i do not like tarts topped with cherries, and used nuts instead
不爱含车厘子挞的我,以坚果🌰替代
my ah bu loves this ~ she couldn’t stop nodding her head

Oh wow, another lovely tart to learn. This is the first time I ever came across to use baking powder on the fillings. Really interesting! Life has been pretty hectic recently. Hopefully, I have more time to visit.
