10g sugar
2g salt
2g active dry yeast
30g milk
35-40g water
15g butter

Filling
240g red bean paste

Decoration/Finishing
8 almonds
eggwash: 10g egg + 10g milk

食材 (可做8个餐包)

面包粉100克
砂糖10克
盐2克
速发干酵母2克
牛奶30克
水35-40克
无盐奶油15克

馅料
红豆泥240克

收尾
杏仁8颗
蛋汁 (鸡蛋10克+牛奶10克)

Directions/做法

IMG_6874– mix all ingredients in bread machine or mixer till dough is soft and non-tacky. cover with cling wrap and proceed with first proofing till 2.5~3x the original size
利用面包机或搅拌器搅拌所有材料,将面团做成圆球状,盖上保鲜膜进行第一次发酵至面团膨胀2.5~3倍

IMG_6866divide dough into equal portions of 20-25g, cover with cling wrap and rest for 10-15 mins
面团分割成20~25克等份,再次盖上保鲜膜静置10-15分钟

IMG_6867roll each dough into a flat disc
将面团擀平

IMG_6868place 30g of red bean paste onto centre of dough
将30克红豆泥放在面皮上面

IMG_6869seal seams well
封口收好,捏紧

IMG_6870seam side downwards; place an almond on top of each bun and press it gently. cover with cling wrap and proceed with second proofing for 40-50mins
收口朝下。取杏仁,放在面团中央轻轻按压一下,盖上保鲜膜,进行二次发酵。约40-50分钟

– bake in preheated oven of 180 degrees C for 12 mins. brush a light coat of egg wash on buns after removing from oven
放进预热至180摄氏度的烤箱里烤约12分钟。取出后趁热在上面薄薄的涂抹一层蛋汁变完成

Personal notes/温馨小贴士:

IMG_6871 i omitted the almond. i prepared a paper cut out (not really cut out though.. i just used a toothpick to poke holes ^^) of a tree
and some dark cocoa powder (see below)
我没用上杏仁。自己准备了剪纸(其实不算剪。。是用牙签慢慢刺成的小树)和黑可可粉 (参考以下图片)

IMG_6872after second proofing, i brushed the bun with a light coat of egg wash, waited for it to dry a little, then place the cut out on the bun.
Please ensure you grease the base of this cut out! then, brush dark cocoa powder over the cut out
二次发酵后,我在餐包上刷上薄薄一层蛋汁,然后让它稍微收干。之后,将剪纸摆在餐包上。
记得,一定要在剪纸底部上刷上黄油。在剪纸上抹上黑可可粉即可
