彩绘蛋糕卷怎么做??

Ingredients (makes a 25 x 25cm square pan cake)

Sponge cake
3 egg yolk
4 egg white (divided into 3 + 1 egg white)
65g caster sugar
60ml water
40ml salad oil
few drops of vanilla extract
80g cake flour
1 tsp corn starch

Filling
150ml whipping cream
14g caster sugar
1 large banana

蛋黄 3个
蛋白 4个 (分成 3 + 1 蛋白)
细砂糖 65克
水 60毫升
沙拉油 40 毫升
香草精少许
蛋糕粉 80克
玉米粉 1 小匙

内馅
鲜奶油 150毫升
细砂糖 14克
香蕉 1大条

Directions/做法

IMG_7109– preheat oven to 170 degrees C
烤箱预热至 170摄氏度

– add 1/2 portion of caster sugar into 3 egg yolk, and beat till frothy. Blend in water, oil and vanilla extract, and then sift in flour. incorporate well
3个蛋黄加入1/2量糖,打发至气泡。依序将水、油和香草精加入,混合后筛入面粉。拌匀

– beat 1 egg white with a pinch of corn starch till stiff peak
在1颗蛋白中加入一小撮玉米粉,将蛋白打发至硬性泡

IMG_7095place your desired picture print out on a greased pan, and line with baking paper
(i’d suggest you start with a simple picture e.g. hello kitty, rilakkuma)
将心意的图案摆放在抹上黄油的烤盘中,盖上烘焙纸
(初学者尽量用较简单的图案,比如凯蒂猫、轻松熊等)

IMG_7099prepare painting batter (according to your picture) by mixing appropriate food colouring with egg yolk batter and egg white meringue
for my monkey outline/eye/mouth: dark cocoa powder
monkey fur: cocoa powder
monkey face: brown food colouring
earphone: egg yellow food colouring
bear in mind that the consistency of the painting batter should be thick and not watery or sticky
依照选择的图案准备彩绘面糊 ~ 将食用色素混入适量蛋黄和蛋白湖
我家三匹の猿的轮廓:黑可可粉
三匹の猿毛:可可粉
三匹の猿面部:褐色食用色素
耳机:蛋黄色色素
切记彩绘面糊性质应偏浓稠性,并非水一般或粘稠状态

IMG_7100pour outline batter into piping cone and pipe outline. bake for 1 min
轮廓面糊倒入挤花袋,画出轮廓。 送入烤箱烤 1分钟

IMG_7101remove pan from oven and pipe in earphone and face batter. bake for 1 min
烤盘取出后,用可可面糊和黄色面糊填上面部和耳机。烤1分钟

IMG_7102remove pan from oven then pipe in fur batter. bake for 2 mins
烤盘取出后填上毛毛部分。 烤 2分钟

IMG_7104beat 3 egg whites till frothy and add in the above remaining egg white meringue
beat till stiff peak and add in the rest of caster sugar. beat till glossy and stiff peak and beat in rest of corn starch
add in egg white meringue in 3 additions into egg yolk batter, then pour onto pan
beat bottom of pan lightly to remove any bubbles that may have been trapped in the batter and bake for 20 mins
(baking time and temperature should be adjusted accordingly)
将3 克蛋白打至7分发,加入之前剩余的蛋白霜
打发至硬性泡后,一次性加入剩余的细砂糖,搅拌至呈现光泽后,加入剩下的玉米粉
打发至呈现尖角状态,分3次加入蛋黄湖拌匀然后倒在烤盘上,刮平
烤盘底部轻拍数次去除气泡,烤20分钟即可
(烤箱温度和烘焙时间谨供参考)

IMG_7105 once cake is baked, revert cake up and remove baking paper from cake immediately
Cover the paper back on the design again then
allow cake to cool completely
蛋糕出炉后扣出脱模,立即将表面的烘焙纸撕掉,再盖回蛋糕体上
让其散热冷却

– meantime prepare filling by beating whipped cream with caster sugar till stiff peak
鲜奶油、细砂糖打至硬性发泡

– slice banana into a big portions
香蕉切大段

– place cake onto a piece of baking paper, design facing downwards. spread cream onto cake and place banana on it. Beginning from the side nearest to you, roll cake up together with the help of baking paper
蛋糕体摆放在烘焙纸上,图案朝下。打发奶油涂抹在蛋糕体上,放上香蕉段。把近身测的蛋糕体连同烘焙纸一并拿起,拉起蛋糕体,往前按压包紧内先后,继续往前卷成蛋糕圈

蛋糕卷冷藏数小时后即可想用
