Dough
15g flour
30g glutinous rice flour
30g rice flour
30g caster sugar
20g of 3-in-1 coffee powder dissolved into 135g warm milk
2 tbsp shortening/butter
2 tbsp condensed milk

Filling
as desired ~ i used low sugar green tea paste and coffee paste

黄油/白油 2大匙
炼奶 2大匙

馅料
随意 ~ 我用了低糖绿茶和咖啡馅

Directions/做法

IMG_7393– Dough: mix all ingredients in a mixing bowl and pour into a container. It will be of sticky-liquid consistency. Place into steamer and steam for 5-10 mins over high heat until it solidifies. allow dough to cool, then chill for at least 1-2 hours before kneading into an elastic dough
皮团: 将所有食材拌匀,然后以大火蒸5-10分钟知道凝固为止。待凉后冷藏1-2小时在搓揉至有弹性

– mooncake ratio is either 2:8 or 3:7. i used 3:7 proportion and my mould is 100g. so divide dough and filling into proportionate portions
月饼皮料对馅料比例约 2:8 或 3:7. 我用了 3:7 比例,模子是100克。所以请依照自家模子将皮料和馅料分割成等份

– wrap a portion of filling with a portion of dough and seal seams. dust some flour onto the dough, place it into mould and press out
将馅料裹入一份皮料,收口封紧、面团撒上些手粉后放入月饼模压出造型

– chill for 20-30 mins before serving
冷藏20-30分钟后在享用

    Is the dough taste like snowskin dough? easy to handle or not? thinking not to use store-bought glutinuous rice flour for snowskin mooncake later..Anyway, you done this mooncake so well.

      Thanks Sonia… Yeah, somewhat like snow skin but slightly chewier since this is mochi mooncake. It\’s easy to handle, except during imprinting.. Just need to dust the dough to prevent sticking to the mould. That\’s why the chilling of the dough in the fridge is important

      heh heh, Kimmy, i\’m considered slow.. i saw people making moon cakes that\’s why i started… these are not sweet at all. i\’m not a sweet tooth person so this was acceptable. further, i used low sugar fillings 🙂

    Vicky , I Googled Starbucks mooncake mould and stumbled upon your pretty mooncakes 😀 Can\’t find that effin\’ mould here in HK *sigh* I\’m going to settle for the white snowy mooncake skin but when I saw your AWESOME coffee-flavored mochi , I think i\’ll use your recipe instead . Will go back later to steal your recipe lol

    I tried similar recipe of mochi style snow skin mooncake. The skin stays fresh and soft for the first 2 days. But after that, the skin hardens badly, much tougher and harder than the non cooked method. Do you experience the same problem for your mooncake?

      hi Fong,i kept my mochi in the fridge and only bring back to room temp when i want to eat it… also i try to finish all homemade goodies in two days, so i didnt experience this problem 🙂

      你好,不好意思才回。麻薯面团是比较软,不过应该有 QQ 口感。这口感就取决于搓揉面团的技巧了。揉足,口感较佳(和做 muah chee 同个原理)。您使用哪种模具?如不是使用手压形月饼模,月饼难定型
