Ingredients (makes a 6 inch square pan cake with removable bottom)

4 large egg yolk
50cc coconut/vegetable oil
25cc warm milk
80g mashed banana (around 1 banana)
80g whole wheat flour
4 large egg white
70g sugar (sifted once)

香蕉泥 80克
全麦面粉 80克
蛋白(大)4颗
白糖,过筛一次 70克

– add salad oil to egg yolks and whisk to incorporate
蛋黄加入盆中,倒入菜种油,以打蛋器混合

- add in warm milk, followed by banana to mixture and mix well. Sift flour into mixture all at once and whisk well
加入温奶后拌入香蕉泥拌匀。筛入面粉再以打蛋器拌匀至无粉粒后,蛋黄糊即完成

- beat egg white till frothy and no longer in liquid form. Add sugar in 2 additions and whisk till stiff and shiny peaks are achieved
蛋白打至产生泡沫。白糖分两次倒入,然后将其打至呈现光泽感即完成

- add 1/3 of egg white meringue into yolk batter and use whisk to mix. Then change to a rubber spatula and fold the batter well to ensure the bottom have been well mixed. Add in the leftover egg white meringue in 2 more additions and repeat the same process
将1/3蛋白霜倒入蛋黄糊中,以打蛋器充分搅拌至无硬块。以橡皮刮刀翻拌,避免浓稠的蛋黄糊残留在碗盆。将剩余的蛋白霜分两次倒入蛋黄糊中,重复以上步骤

- pour batter into pan from a considerable height ~ this helps to eliminate the amount of air bubbles in the batter
面糊从较高处倒入模具中以减少气泡

- bake cake in water bath method in preheated oven of 220 degrees C for 8 mins, and then 55 mins for 150 degrees C
烤盘送入预热至220 摄氏度烤箱,水浴发,烤8分钟,然后降温至150摄氏度,继续烤55分钟即完成

- cool cake in pan for 15 mins before unmoulding cake
蛋糕在烤盘里冷却15分钟后在脱模

– heat up embosser (if using) and emboss on cake after it has cooled
(如用)烙印加热后,在冷却后的蛋糕烙上印即可

    Hi Victoria. As always perfect bakes from you. I was just wondering if it is possible for me to replace the wholewheat flour with cake flour and if its OK to replace should the amount be the same. How is this texture using whole wheat flour compared to cake flour
    What do you think – should I replace the whole amount or just use 50% of wholewheat and 50% of cake flour. Also I don\’t have a 6 inch pan. I need to use a ,7 inch round loose bottom. So for water bath can I put the 7 inch round with batter into a bigger pan and put these 2 pans into the bigger waterbath pan?? Sorry hope you got what I mean. I have some ripe bananas and hope to do this. Thanks again.

      Hi Chloe, yes, u can replace WW flour one for one, and it is based on individual preference how u want to substitute. Cake flour bakes will have a finer texture. I think it will be better that u try these out yourself to know the difference to be frank.

      For 7 inch round pan, I suggest to increase recipe ingredients by 25 %. Sorry, but why would you want to put your pan into another pan and then another pan? I do not think this is necessary. Just wrap it with three layer of foil tightly. If u r still worried of seepage, place a wire rack inside water bath pan, then place cake pan on top. This way u elevate it directly above the water.
