when my “qin qin” (my term of endearment for May) posted her whole wheat mocha cake, i knew it was another “breaking news” headlines in my to-bake list
the aroma in the kitchen in the house is indescribable

Recipe adapted from 厨苑食谱
Ingredients (makes a 6 inch round cake) * i made mine in a 7 inch square pan
A
6 tsp instant coffee powder + 3tsp hot water(mixed well)
B
230g unsalted butter(room temperature)
150g icing sugar
3 eggs
4 tbsp whipping cream
150g low protein flour
1/2 tsp baking soda
30g coco powder
60g whole wheat flour
60g crushed oreo biscuit
Topping
mini oreo biscuit
食材 (可做一个6寸圆形蛋糕)*我用了7寸方形烤盘

230克奶油(室温)
150克糖粉
3粒蛋
150克低粉
4大匙鲜奶油
1/2茶匙苏打粉
30克可可粉
60克全麦粉
60克奥利奥饼干碎
收尾
迷你奥利奥饼干
Directions/做法
– Mix butter and icing sugar with a spatula, then switch to electric whisk. use medium speed and beat until light and fluffy
将奶油和糖粉用刮刀搅拌后, 再以搅拌机打发均匀
– Add in egg one by one, beating well after each addition
分次加入全蛋液,每次都必须等至蛋液充分被搅拌后才加入另一份量的蛋液
– Add in coffee mixture and whipping cream and mix well
加入咖啡液及鲜奶油拌匀
– Fold in sifted flour, baking soda and cocoa power, mixed to combine
将过筛的底粉, 苏打粉及可可粉混合加入, 切拌均匀
– Then add in whole wheat flour, cutting it into batter in an opposite direction. do not over mix
然后加入全麦粉,以不规则手法拌匀, 不可过度搅拌
– Lastly, add in crushed oreo biscuit, and stir quickly to incorporate
最后加入奥利奥饼干碎, 快速搅拌拌匀
– Spoon batter into a 6″round cake tin lined with greaseproof paper , spread evenly and arrange the top with mini oreo biscuit
倒入一个6寸圆模(底部铺上油纸),表面铺平再铺上米妮奥利奥饼干
– Bake in preheated oven of 160C for 50 minutes or until a skewer inserted into the cake comes out clean
送入预热烤箱里以160度烘烤50分钟或以牙签插入不带出湿沾的面糊即以熟透
Personal notes/温馨小贴士:
– my cake was baked for 55 mins
我的蛋糕烤了55分钟
– i topped portions of the cake batter with oreo cookies and left some portions plain
收尾时,我只在部份面糊上摆设了奥利奥曲奇饼;其余部份没装饰

May I know whether whole wheat flour and wholemeal flour are the same flour?
Hi ~ there is no difference ~ just that different regions call it differently. UK: wholemeal; US: whole wheat

Hi Susan, i don\’t see why not :). allow it to thaw in the fridge for a couple of days and give it a good shake before pouring and using it.
