mooncake skin (recipe adapted from eileen の记事本
112.5g flour
17.5g cocoa powder
85g golden syrup
25g peanut oil
1/2 tsp alkaline water

homemade coffee custard (adapted and modified from Bake for happy kids)
25g butter, soften
60g caster sugar (adjust accordingly to personal preference)
3 egg yolk (from 3 large eggs), roughly beaten
1 tbsp condense milk
40ml whipping cream
60ml coconut milk
20g all purpose flour
15g cusard powder
10g tapioca flour
1.5 tsp espresso powder

饼皮
面粉 112.5克
可可粉 17.5克
糖浆 85克
花生油 25克
碱水 1/2小匙

自制咖啡卡仕达馅料
软化黄油 25克
绵白糖 60克 (请依照个人喜好调整份量)
蛋黄 3大个,略打散
炼奶 1大匙
淡奶油 40毫升
椰浆 60毫升
面粉 20克
卡仕达粉15克
木薯粉 10克
浓咖啡粉 1.5小匙

Directions/做法:

IMG_7690– prepare custard before hand. combine flour, custard powder and tapioca flour. beat butter and sugar till light and add in egg yolk in few additions. beat in condense milk, cream and coconut milk. finally, sift in flour and mix well. pour mixture into container and steam over medium heat for 25 mins, stirring every 5 mins
馅料:将粉类食材混合。黄油和糖打发后,加入蛋黄液,拌匀。拌入液体食材,最后筛入粉类食材。再次拌匀后,放进容器中,以中火蒸煮25分钟,每5分钟搅拌。

– set aside custard to cool, then knead till it is smooth. cling wrap custard and chill if required. this can be stored up to a week in the fridge before baking
卡仕达馅料待冷却后,搓至成团,盖上保鲜膜,待用。卡仕达馅料可存放在冷藏库一周

– prepare mooncake skin by mixing all ingredients together. rest dough for 30 mins and divide into 6 portions
月饼皮:将所有材料混合拌均匀,静置30分钟,然后把面团分成6等份

– wrap a portion of filling with a portion of dough, press into mould and release on a lined baking pan
将饼皮裹馅料,搓圆后压入月饼模里,扣出排在烤盘上

– bake in preheated oven of 160 degrees C for 10 mins, remove from oven and cool for 10-15mins. then place it back into the oven to bake for another 10-15 mins
放入预热至160摄氏烤箱,烤10分钟,取出放置一旁待冷,约10-15分钟后,再放入烤炉烤10-15分钟即可

Personal notes/温馨小贴士:

– i sprayed some water on the mooncakes before baking
送入烤箱前,我在月饼上喷了一层水

– this mooncake does not need any eggwash

    • Hi Mandy, i provided the taobao link in my post. once you purchase, you need to communicate with the staff through the communicator (i hope you are familiar with Taobao) and discuss with them what you want done.

    Thanks for the website that you recommend… Went into the shop and it is all Chinese. Oh dear!!! I can\’t buy anything at all… Is there any mooncake mould shop that you know has English translation??? Sorry that I\’m totally hopeless with Chinese :p

    Considering the Filling is made of eggs and cream and stuff.

    Also, why did you spray water onto the mooncakes? keep it moist?

    I this this would make a great gift, but I\’m afraid they would go bad if left for too long!

    • hiya, thanks for your compliment.. yes, customised mould\’s lots fun. ok, when i posted this, my mooncake had been around for slightly more than 10 days and was keeping absolutely well. of course, it was stored well in airtight container and chilled (return to room temperature before serving).

      i had one that i left in room temperature (just to see out it turned out) for more than a week.. it was surprisingly ok as well (in that the taste was ok, and no one had diarrhoea ;).. but don\’t forget that beijing is a dry country plus i usually have my air conditioning in the hall, so guess that helped. still, i discourage this… (i was like u.. curious to find out how well this keeps)

      spraying water helps to prevent the skin from cracking 🙂

    Can I substitute alkaline water with other product or may be omit that altogether? Alkaline water is not easy or may be not available for food in Australia. Thanks

      Hello Meike, you can make very pretty ones too i’m sure.

      Unfortunately you cannot omit or substitute alkaline water (best “substitute” is to mix lye powder with water). it is a crucial element for making mooncake skin as it neutralises the acidity of golden syrup hence preventing the mooncake from developing a somewhat acid taste. secondly, it also controls the “speed” for which the mooncake “returns oil/start to turn oily” . apologies i can’t find a better term to this ~ but this speed controlling affects the texture of the skin. besides, addition of alkaline water also ensures a nice browning of the mooncake. last but not least, the chemical reaction of alkaline water with the acidity of the dough does produce some level of carbon dioxide, resulting in the slight rising, creating a less denser skin but yet maintaining the shape of the mooncake.

      these are just some reasons that i can think of. i do hope this helps. Try searching the asian grocery stores (run by chinese or hong kong chinese). i am sure you can find something there.
