Recipe adapted & translated from Qi Qi in the house
Ingredients (makes a 6 inch round cake)
(A)
80g bittersweet chocolate chips *i used hershey’s semi-sweet mini chocolate chips
26g cocoa powder
50g unsalted butter
50g whipping cream
(B)
3 egg yolk
30g corn starch
(C)
2 egg white
70g caster sugar * i used 50g
(A)
80克 苦甜巧克力纽扣 好时微甜迷你巧克力豆
26克 无糖可可粉
50克 无盐黄油
50克 动物性鲜奶油
(B)
蛋黄 3颗
玉米粉 30克
(C)
蛋白 2颗
细砂糖 70克 *我用了50克
Directions/方法
– place all of ingredients (A) into a bowl, and heat over a pot of simmering water. turn off fire once some of the chocolate chips begin to melt, and use the residual heat to melt the remaining ingredients, stirring constantly
将材料A隔水加热(巧克力纽扣有一些溶化便熄火),利用余温拌匀
– add in egg yolk, incorporate well
加入蛋黄拌匀
– add in corn starch and mix well
加入玉米粉拌匀
– add sugar in few additions to egg white, beating till stiff, dry peaks
细糖分次加入蛋白里拌打至干性发泡
– fold one third of egg white meringue into chocolate batter
取1/3蛋白糊加入巧克力面糊以刮刀拌匀
– then, POUR the entire chocolate batter INTO THE REMAINING EGG WHITE MERINGUE and fold till well mixed
将拌匀的面糊加入剩余的蛋白糊中拌匀
– pour batter into a 6 inch cake pan lined with baking paper (at the bottom only)
6”蛋糕模具底部铺上防粘纸,倒入拌好的蛋糕糊
– bake with water bath in preheated oven of 175 degrees C for 35-40mins
送入预热烤箱175°度,水浴法约35-40分钟

– i baked my cake on the second lowest rack of oven
我用了烤箱倒数第二层烤蛋糕
– after baking the cake for 35mins. it was wet in the middle, but the top began to crack, so I turned off the top heat, covered cake with foil, and continued to bake the cake at 175 degrees for 16 mins
35分钟后,我的蛋糕内部还没熟透,可是蛋糕顶部有开裂痕迹。所以我将上火关了,蛋糕盖上锡纸,以175摄氏度继续烤16分钟
– sift icing sugar over cut out paper or stencil on cake (if desired). what i have here is a paper cut out, not cake stencil
您可选择在蛋糕顶部摆上蛋糕印花模,在撒上糖霜。我家木有印花模,都是用剪纸
