Ingredients (makes an 8 inch square cake)

5 egg yolk
1 egg
1/4 tsp salt
55g corn oil * i used coconut oil
80g water * i used milk
75g cake/low protein flour
20g cocoa powder

200g egg white
80g caster sugar * i used 60g

* i added 1 tsp of vanilla extract and 30g of 85% chopped chocolate

全蛋 1颗
盐 1/4 小匙
粟米油 55克 *我用了椰子油
水 80克 *我用了牛奶
低筋/蛋糕面粉 75克
可可粉 20克

蛋白 200克
绵白糖 80克 *我用了60克

*我另外加了1小匙香草精和 30克黑巧克力碎(85%)

一般戚风蛋糕做法 ~ 如加入黑巧,可在面糊制作好之后拌入

– bake with water bath on second lowest rack in preheated oven of 120 degrees C for 20 mins, and then 100 degrees C for 40 mins (fan-forced temperature. open oven door slightly during the last 2o mins of baking) * i baked at 220 degrees C for 6 mins, then 60 mins at 150 degrees C (without fan force)
蛋糕以水浴发在烤箱倒数第二层,120 摄氏度烤20分钟后转100 摄氏度烤40 分钟 (全程开风扇,最后20分钟烤箱开小缝)*我用了220摄氏度烤了6分钟,转150摄氏度烤 60分钟 ~ 无风扇模式
