Ingredients (makes 8 buns)
Dough
Half portion of the 5 thousand dollar starter dough recipe
* i used trehalose in place of sugar
Filling
4 eggs
8 slices of luncheon meat
Finishing
Eggwash (use the leftover egg from the dough recipe)

馅料
鸡蛋 4颗
午餐肉 8片
收尾
鸡蛋 (做面团剩余的鸡蛋即可)
Directions/方法
while bread is proofing, prepare fried eggs. crack eggs in a bowl and beat briefly. pour a quarter into frying pan with oil
面包发酵当儿准备炒蛋。将鸡蛋打入碗中,略略拌匀。热锅冷油,倒入四分之一量的蛋湖
fold the egg up as above
将蛋饼折叠如上
repeat this process 3 more times till egg batter is used up
以上步骤重复3次直到蛋湖煎完为止
slice each egg into half and pair with a slice of luncheon meat
各片蛋饼切半,然后摆放在午餐肉上。这样馅料就准备好啦
after dough has gone through first proof, punch it down and divide into 8 portions. i divided mine into a 68g/portion bun. rest dough for 20 mins
一次发酵后,面团排气并分割成8份。我的餐包每份约 68克。 面团静置20分钟
take a portion of dough and roll it out into an olive shape. place a portion of filling in the middle
取一份面团,擀成椭圆形后,在中间摆放一份馅料
wrap filling with dough
用面团把馅料裹起来
seal seams well, then invert bun so that seams face downwards
封口捏紧后,将面团往下翻(既是封口朝下)
take the small portion of leftover dough, roll it out flat and cut out small round circles with a round cookie cutter
将剩余的小份面团擀平,用小圆形饼干模切出圆面皮
press dough into an oval shape
用手指把面皮压成椭圆形
use a small round piping tip to make 2 holes. this forms the pig’s nose
用小圆形裱花嘴在面皮上切出两个小孔。这形成了小猪的鼻子
place the nose onto the bun and allow to rise for 30 mins
将鼻子粘到面包上。面包再次发酵30分钟
place black sesame seeds on bun and brush bun with egg wash
面包放上黑芝麻,并刷上蛋液
– bake in preheated oven of 180 degrees for 23 mins or till golden brown
送入预热之180摄氏度烤箱烤23 分钟或至金黄色即可

Hi AnChee, not sure i am interpreting youR question correctly, but yes, this dough uses starter dough. it involves the preparation of starter dough a few hours in advance, and thereafter mixing it in with the main dough ingredients. hope this helps
