Recipe adapted from Carol

Ingredients (makes 24 biscuits)

half portion simple puff pastry (ingredients below)
150g all purpose flour * i used cake flour
100g unsalted butter, chilled and cut into 1cm cubes
65ml cold water
1/3 tsp salt

jam 100g * i used strawberry jam

1 egg for egg wash

面粉 150克*我用了蛋糕粉
无盐黄油 100克,切成 1厘米丁块儿,冷藏
冰水 65毫升
盐 1/3小匙

果酱 100克*我用了草莓酱

鸡蛋 1颗,收尾用


IMG_8477– prepare puff pastry. mix salt with flour in a bowl, then rub in butter till pea size

– pour in water, and mix till you get a dough. press into a square and chill for 30 mins
加入水,混合成团。裹上保鲜膜,捏成方形、冷藏 30分钟

– roll puff pastry into a 15 x 30cm sheet
面团从冷藏库取出,擀成 15 x 30厘米面皮

– do a 3-fold and roll out procedure six times (flouring when necessary ~ but do brush off excess flour after folding dough). chill at anytime if you find your butter melting
面皮进行六次三折、擀平步骤(适当时候撒上面粉 ~ 不过折叠后,必须将多余面粉刷掉)。如感觉黄油快融化,可裹上保鲜膜并冷藏 30-40分钟再继续折叠擀压程序

– after the last 3 fold, roll sheet into 0.3cm thick
完成最后一次折叠程序后,将面皮擀成 0.3厘米厚度

– use a 3cm round shape fluted cookie cutter to cut out several disc. then use a 1.5cm round cutter to cut out circles in the middle of these discs
用 3厘米圆形花边曲奇模裁切出面皮;再用 1.5厘米圆形模,在一些花边面皮上切出圆形面皮

– brush some egg wash on a fluted cookie dough (without a hole in the middle), then “stick” the cookie dough (with a hole) on top

– egg wash the top of cookie dough and fill hole with jam *if you are using cookie cutters with weird corners like mine, try piping in the jam or using toothpick to push jam to fill the cavity
面皮表面刷上薄薄一层蛋液并加入适量果酱 *如您用的曲奇模和我滴一样(也就是斜歪角多),可选择将果酱裱入或以竹签将果酱推至角落

– roll out the remaining dough and repeat the above process till all dough has been used up

– bake in centre rack of preheated oven of 200 degrees C for 10 mins, then bake a further of 8-10 mins at 190 degrees C * i baked for another 10 mins, turned off upper heat and baked for another 10 mins
送入预热至 200摄氏度烤箱中层烤 10分钟后,降温至 190摄氏度再烤 8-10分钟*我继续烤了 10分钟后,关掉上火,再烤 10分钟
