Recipe adapted from 君之

Ingredients (makes 50 pieces)

100g cake flour
10g egg, slightly beaten
65g butter
35g peanut butter
50g icing sugar

低筋面粉100克
鸡蛋10克,稍微打散
黄油65克
花生酱35克
糖粉50克

Directions/做法

IMG_8423– beat softened butter with icing sugar till pale and fluffy
软化黄油和糖粉混合,用打蛋器打发,直到颜色稍变浅,体积膨松

– add in beaten egg
打发的黄油里倒入打散的鸡蛋

– continue beating with mixer till both butter mixture and egg are well blended
继续用打蛋器搅打,直到黄油和鸡蛋完全融合,呈现膨松轻盈的状态

– add in peanut butter to the above, and mix well
在黄油里倒入花生酱,用打蛋器搅打,使花生酱和黄油彻底混合均匀

– add in flour, and mix using a rubber spatula till you get a soft dough
把面粉倒入混合好的花生黄油里、用橡皮刮刀轻轻搅拌,成为均匀的饼干面糊

– place dough onto table and roll into a log with 2.5cm diameter. freeze for 1.5 hours till it is very hard
把面糊倒在案板上,用手搓成直径约2.5CM的长条、放进冰箱的冷冻室(冻冰的那层),冷冻1.5个小时以上,直到长条变得坚硬

– slice cookie log into portions of 0.8cm thickness per piece
把冻硬的长条用刀切成厚度约 0.8厘米的小圆片

– place sliced cookie onto baking tray, leaving some space between each piece. bake in preheated oven of 180 degrees C for 15-20 mins
把小圆片排在烤盘上,每个小圆片之间留出适当空隙,然后将烤盘放入预热好180度的烤箱烤焙 15-20 分钟

– if using mould, pinch appropriate amount of dough, shape into ball and press dough into floured mould. knock it out onto baking paper and bake as above. baking time will need to be adjusted according to size of cookies
如用模子,捏出适量面团、搓成小圆球并压入筛上面粉的模子。倒扣至烤盘上即可。注:烘焙时间需根据饼干大小再适当调整
