I’d always wanted to try the infamous fiona lau’s tionk tionk tionk butter cake
so this was an appropriate time to use this recipe

一直想尝试刘姐远近闻名的弹性黄油蛋糕
这次,终于做上咯。。。
的确,弹力十足唷

Ingredients (makes an 8 inch square cake)

filling & topping
3 heaped tbsp nutella
200g chopped walnuts

IMG_8511食材 (可做一个8寸方形蛋糕)

黄油(冷藏)230-250克
鸡蛋 5颗
糖 200克
自发粉 220克
淡奶油 50毫升
香草精 1小匙

内陷和收尾
巧克力酱 3大匙
核桃仁 200克,切碎

Directions/做法
* please refer to fiona’s for english directions on preparing the cake 

– 鸡蛋分隔。白糖分三次加入蛋白,打成硬性状、并呈现小勾

– 黄油打至蓬松发白;加入香草精、拌匀。蛋黄逐颗加入、搅拌均匀

– 加入一半的面粉,混合均匀。加入淡奶油,拌匀后再加入剩余的面粉。搅拌均匀

– 勺一半的蛋白霜,拌入以上面糊。拌匀后,再将剩余的蛋白霜翻拌进去

– 烤盘涂抹油并铺上烘焙纸,将面糊倒入。铺平。烤盘在案板轻拍数下

– 送入预热至 150-160摄氏度烤箱烤烤 70分钟或直到插入蛋糕的竹签不带面糊即可

– i used 227g butter and 165g sugar
我用了 227克黄油和 165克白糖

– to make walnut nutella cake, fold a handful of chopped walnuts into batter after it has been prepared. spoon half of the batter into prepared pan, and top with nutella. then spoon the remaining batter on top. use a chopstick or skewer to swirl the cake a few times, then smoothen the top. sprinkle the remaining walnuts on top of cake
制作核桃巧克力酱蛋糕:蛋白霜拌入面糊后,将一手的核桃仁碎拌入面糊。将一半面糊勺入烤盘,加上巧克力酱;再将剩余的面糊勺入。用筷子或竹签在面糊划上数圈。面糊顶部用刮刀铺平,撒上剩余的核桃碎

– the egg yolk batter was quite thick for me to handle but i found it easier to fold the egg white meringue using my hand instead
准备好的蛋黄糊(对我来说)有点厚,所以我用手将蛋白霜拌入 ~ 轻松多啦

– my cake was baked in 160 degrees C oven for 55 mins
我的蛋糕用了 160摄氏度烤箱烤了 55分钟
