IMG_8762Ingredients (makes two 127g mini loaves)

biga pre-fermented dough (and i finally got this name right!!)
88g strong bread flour
1g instant dry yeast
50g water

main dough
86g cake flour
12g 2-in-1 coffee powder
15g egg + 1/4 tsp coffee oil (or use coffee extract)
1.5g instant dry yeast
15g water
1g salt
7g butter
25g sugar

finishing
egg wash
flaked almonds as appropriate

液种
强力面包粉 88克
即溶干酵母 1克
水 50克

主面团
蛋糕粉 86克
二合一即溶咖啡粉 12克
蛋液 15克+咖啡油 1/4小匙(可用咖啡香精替代)
即溶干酵母 1.5克
水 15克
盐 1克
黄油 7克
糖 25克

收尾
蛋液
杏仁片 适量

Directions/做法

IMG_8765– mix all biga dough ingredients together. you should get a stiff dough. allow to proof for about 2 hours
液种面团食材混合成团。发酵约两小时

– mix all main dough ingredients together (except butter) with biga dough that has been cut into small pieces. knead till you get a dough
主面团食材(除黄油)混合,加入剪成小块儿的液种面团。搓揉至成团

– incorporate butter and knead till you get a silky dough
加入黄油、搓揉至面团有光泽

– proof till double in size
一次发酵至双倍大

– punch dough down and divide into 2 equal portions. shape each portion into a ball
面团排气后分割成二等份、搓成小圆球

– place in greased baking pan and second proof till double in size *i used two L6 x W6 x H6cm mini square baking pans
摆入抹上油的烤盘,发酵至双倍大 *我用了两个迷你四方形烤盘~尺寸为长6 x 宽6 x 高6 厘米

– egg wash and place flaked almonds on surface of dough. bake in preheated oven of 180 degrees C for 25 mins
面团表面刷上蛋液,撒上杏仁片。送入预热至 180摄氏度烤箱烤 25分钟即可

    I believe that all bread that use pre-fermented dough will come out soft and fluffy. The aroma of coffee from the bread will no doubt makes one reach for more. Thank you for sharing with us yet another wonderful recipe Victoria.

    Yes, I agree with Veronica, I do believe that too. Pre-fermented dough bread always turn out soft and nice. This bread. Lovely coffee loaf with almond topping. This will so good to go with a cuppa of coffee 🙂

    Hi Victoria. Thanks for your awesome bread recipes. I have the 3 in 1 coffee powder which contains sugar and. Creamer but your 2 in 1 besides coffee does it has sugar or creamer?? Otherwise can I just use instant coffee 12 gm. Hope for your clarification

      Hi, not sure where u r based, but in general when 2 in 1 is mentioned in recipes, it is coffee with creamer. If its coffee with sugar, we will not use 2 in 1. Just coffee powder and sugar. Pls do not substitute with coffee powder and stick with recipe. Otherwise 3 in 1 is preferred.
