dough
75g shiratamako (feel free to use glutinous rice flour but please reduce water accordingly)
75g water

black sesame filling recipe source adapted with modifications/黑芝麻馅原食谱: 蚊子的天空
50g black sesame powder
25g coconut flower sugar
35g organic shortening ( i use Nutiva’s organic shortening with red palm and coconut oil)

面团
白玉粉 75克
水 75克 (也可用糯米粉,不过水份需减量)

黑芝麻内陷
黑芝麻粉 50克
椰子花糖 25克
有机白油 35克(我用 Nutiva 牌子有机红棕榈椰子白油

Directions/做法

IMG_8899– fry black sesame powder briefly till fragrant
黑芝麻粉略炒至发出香味儿

– place powder into food processor and blend with sugar till well mixed
将炒熟的黑芝麻粉和椰子糖摆入食物搅拌器搅拌均匀

– rub in shortening and mix till you get a soft dough. divide into equal portions and chill
加入白油,混合成团。分割成等份、冷藏待用

– mix shiratamako with water and divide into equal portions
白玉粉加入水、和面。分割成等份

– wrap a portion of filling with a portion of dough. seal seams well
将一份馅料裹入面团、封口捏紧

– bring a pot of water to boil, and place dumplings in it. dumplings are done once they float to the surface
将一锅水烧开后加入汤圆。汤圆浮面时既代表汤圆已煮熟

– place cooked dumplings into a bowl of ice water if not eating immediately and warm it before serving (otherwise, filling will be hard). otherwise, serve with desired dessert
煮熟的汤圆加入甜汤即可享用。如不立马食用,请将煮熟的汤圆摆入一碗冰水。食用前适当加热即可(如不加热,内陷会因冰水缘故而稍微硬化)

Personal notes/温馨小贴士:

– if you like to create the rabbit ears and eye markings on the dumplings like mine, simply heat a metal pointed object (i used my candy thermometer) till it turns red. then emboss it onto UNCOOKED rice balls ~ ta-da ~~~ lebbit lebbit
