Ingredients (7 inch round pan * i used 8 inch square pan)
A
200g chopped gula melaka * i used 118g as i ran out of gula melaka! arrggggg
100ml coconut milk
B
250g salted butter * i used unsalted butter + 1/4 tsp sea salt
36g brown sugar * i used 70g coconut flower sugar
C
5 eggs
D
200g cake flour
5g baking powder
1/8 tsp baking soda
20g coconut cream powder
finishing
desiccated coconut, as appropriate
食材(7寸圆形烤盘*我用了8寸方形烤盘)
A
马六甲椰糖 200克*我用了 118克。。。家里就剩那么多啦!败笔
椰浆 100毫升
B
有盐黄油 250克*我用了无盐黄油加 1/4小匙海盐
黄糖 36克 *我用了 70克椰子花糖
C
鸡蛋 5颗
D
蛋糕粉 200克
泡打粉 5克
苏打粉 1/8小匙
速溶椰浆粉 20克
收尾
干椰丝 适量
Directions/做法
– grease and line pan
烤盘抹油、铺上烘焙纸
– place all of A together in a saucepan, and bring to a gentle boil, stirring non stop till all gula melaka has melted. allow to cool
A 食材放入奶锅,以小火加热,之间不停搅拌直到马六甲椰糖溶化。离火、待凉
– sift all of D together and set aside
D 食材一同过筛、待用
– beat B till light and fluffy
将 B打至蓬松状态
– add in C in 3 additions
C食材分三次加入
– finally, alternate and fold in A & D, ending with D ~ i.e. A & D, A & D and finally D
最后,A和 D 食材以交替方式拌入、以 D收尾 ~也就是 A和 D,A和 D,最后加入 D
– pour batter into pan, level out. sprinkle desiccated coconut on top of batter and bake in preheated oven of 170 degrees for 40-50 mins * i baked 48 mins at 180 degrees
面糊倒入烤盘,铺平后在面糊撒上适量干椰丝。送入预热至 170摄氏度烤箱烤 40-50分钟 *我用了 180摄氏度烤了 48分钟
Looking at the ingredients Im sure it taste really good!

Victoria, this looks similar as Kelvin Chai\’s recipe in I Love Butter 2 which I also baked again recently. Now looking at your cake, making me craving for it!

Hi thanks for sharing recipe of Gula Melaka Butter Cake. Can I subsitute coconut milk with any other liquid. Is soy bean milk ok? And what is coconut flower sugar?
Hi Rita, i do not encourage as it will affect the taste. Further, coconut milk e.g. ayam brand in this instance has a different consistency from beverage like soy milk. I do not think it will be too big a deal if you absolutely want to make a substitution, though i will say, please don\’t. The cake in this flavour is a winner.

Hi Estella, i will say there isn\’t a true substitute for coconut cream powder due to its richness. you can use milk powder instead but that will alter the taste all together

The beginning of the batter is B. Once you beat butter and sugar till light and fluffy , u incorporate the eggs. You end the batter by folding and alternating in liquid and flour
