ingredients
4 bananas
100g rice flour
2 tsp baking powder
1/2 tsp salt
120ml water
1 tsp ammonia powder
1 tsp cooking oil
香蕉 4条
粘米粉 100克
泡打粉 2小匙
盐 1/2小匙
水 120毫升
臭粉 1小匙
油 1小匙
Directions/做法
– sift flour and baking powder into mixer bowl. add in salt, and water. whisk batter till no longer lumpy
面粉和泡打粉过筛入容器中。加入盐和水。面糊搅拌至无颗粒
slice bananas into half and heat up a saucepan of oil over high heat
香蕉切半并将一锅油以大火加热
just before frying banana, mix ammonia powder and cooking oil into batter. mix well
dip banana into batter
炸香蕉前,将臭粉和油加入面糊。拌匀
香蕉挂浆
drop battered bananas into saucepan. the oil may bubble a bit
turn fire down slightly to prevent oil from spilling
fry till golden brown, dish up and drain on kitchen towel
enjoy hot!
挂上浆的香蕉放入热油中。此时,热油会翻滚。将火候稍微降低以避免油溢出
将香蕉炸至金黄色、捞起并沥干油份

May I ask what is the purpose of ammonia powder? Can I leave it out?
Hi. the ammonia powder acts as a leavening. i do not suggest omitting it as it helps to provide the crisp and porous crumb
