IMG_1369and on monday, 2.22, we celebrate the last day of the chinese new year… what about some homemade dumplings?
2.22 又见元宵节。。。祝愿大家团团圆圆继续过个好肥年哈!

ingredients 

dough
200g glutinous rice flour (divided into 40g + 160g)
130g water (divided into 30g + 100g)
1 tbsp green tea powder
1 tbsp dark cocoa powder

filling
180g fried black sesame
30g ground peanut (NOT peanut powder)
130ml coconut oil
90g coconut nectar sugar (light brown sugar ok)

糯米粉 200克(分成 40克+160克)
水 130克(分成 30克+100克)
绿茶粉 1大匙
超黑可可粉 1大匙

内馅
熟黑芝麻 180克
花生碎 30克(不是花生粉哈!)
椰子油 130毫升
椰子花糖 90克(黄糖 OK)

Directions/做法

place sugar and black sesame seed in blender
blend till fine
事先准备内馅
糖和黑芝麻倒入搅拌器、搅拌至细状

IMG_1306add in ground peanut
加入花生碎

IMG_1307mix well
拌匀

IMG_1308IMG_1309pour in coconut oil and mix well
倒入椰子油、拌匀

IMG_1310IMG_1311scoop mixture into blender and blend till you get a paste
黑芝麻糊勺入搅拌器、搅拌成糊

IMG_1312chill paste for a few hours, or till firm
you should be able to scoop it using an ice cream scoop
黑芝麻糊冷藏数小时直到凝固
凝固后的黑芝麻糊可以用冰淇淋勺勺出小球

IMG_1313the easiest way to shape the filling is by using cling wrap
place 12g of filling onto cling wrap
分割整形内馅最简单的方式是运用保鲜膜
保鲜膜勺上 12克内馅

IMG_1314then wrap it up and twist into a ball
用保鲜膜裹紧

chill if you feel the filling is beginning to feel oily
当当!口以啦。。如果觉得内馅油腻,冷藏备用

IMG_1317prepare dough
mix 40g flour with 30g water
divide into 4 flat disc
制做面团
40克糯米粉加入 30克水
分割成 4份面片

IMG_1318cook them in a pot of boiling water
放入热水中煮熟

IMG_1320remove once they float onto surface
面片浮至水面时即可捞起

IMG_1321add this to the remaining 160g flour
将其加入剩余的 160克糯米粉

IMG_1322pour in water bit by bit
mix initially with spatula as the cooked dough may be too hot to handle
慢慢加入剩余的水
先用刮刀搅拌

IMG_1323knead everything into a dough and divide into 3 equal portions
待面片没那么烫手时用手将面团搓揉成团、分割成三等份

IMG_1330IMG_1331sift green tea powder into one portion and knead evenly
一份筛入绿茶粉、搓匀

IMG_1332similarly, sift cocoa powder into another portion and knead evenly
另一份面团筛入可可粉、揉匀

IMG_1346 IMG_1347 IMG_1348roll all the dough into a flat sheet measuring 17 x 11cm
三份面团擀成 17 x 11厘米面片

IMG_1349then stack them together
叠放在一起

IMG_1350 IMG_1351roll out once again and divide dough into half
再次擀开、分割成两半

IMG_1352stack one half on top of the other
将其中一份叠到另一份面片上

IMG_1353turn dough 90 degrees
面团转 90度

IMG_1354roll out once again into a 22 x 13cm sheet
擀成 22 x 13厘米面片

IMG_1357roll dough up using cling wrap
用保鲜膜将面团卷起

IMG_1358divide in 18-20g per portion
分割成 18-20克面团

IMG_1359flatten one portion
将一份面团压平

IMG_1360 IMG_1361and wrap filling into it
包上一份内馅

IMG_1362seal seams well
封口捏紧

IMG_1363place it seam side down
朝下

IMG_1364place dumplings into a pot of boiling water
汤圆放入烧开的水

IMG_1365and scoop out once they float to the surface
飘至水面后捞起

IMG_1366place into a bowl of room temperature water to stop the cooking process
放入一盆装着室温水的容器中

Personal notes/温馨小贴士:

IMG_1345– dough makes 18 servings of dumpling. you will have extra filling ~ keep it to make steam buns
面团份量可做 18颗汤圆。这次内馅份量较多~可留着做包子

– if you do not have fried black sesame, you can pan fry 180g black sesame till they are aromatic
如果家中木有黑芝麻,可直接将 180克黑芝麻干锅炒香
