ingredients

abacus seeds
600g steamed yam
275g tapioca flour
1/2 tsp salt
165ml boiling water
1 tbsp shallot oil

other ingredients
2 tbsp shallot oil
4 cloves garlic, minced
35g fried shallot, crushed
3 tbsp dried shrimp, soaked & finely chopped (keep water used for soaking dried shrimp)
180g minced meat
7 mushroom, soaked and thinly sliced (keep water used for soaking mushroom)

seasoning
1 tbsp fish sauce
1/2 tbsp dark soy sauce
1/2 tbsp sesame oil
150ml water (use the water used to soak dried shrimp and mushroom and add additional water to get 150ml)
pepper to taste

蒸熟芋头 600克
木薯粉 275克
盐 1/2小匙
水 165毫升、烧开
小葱头油 1大匙

配料
小葱头油 2大匙
蒜头 4瓣、剁碎
炸葱头 35克、捏碎
干虾米 3大匙、浸泡至软后切碎(浸泡虾米的水不要扔)
肉末 180克
冬菇 7小朵,浸泡至软后切薄丝(浸泡冬菇的水不要扔)

调味料
鱼露 1大匙
老抽/酱油 1/2大匙
芝麻油 1/2大匙
水 150毫升(浸泡虾米+浸泡冬菇的水 =150毫升。不够再加清水)
胡椒粉 适量

Directions/做法:

IMG_1704mash steamed yam whilst hot
蒸熟的芋头趁热压成泥

IMG_1705add in flour and boiling water and stir to mix very quickly
use hands to knead into a dough when it is not too hot
加入面粉和沸腾热水、快速搅拌和面
待食材没那么烫手时用双手将其揉成团

IMG_1706once you get everything into a dough, add in 1 tbsp shallot oil
成团后加入一大匙小葱头油

IMG_1707knead to incorporate
cover dough with a warm towel so it doesn’t dry out
揉匀
面团盖上一块沾上温水的布以避免面团变干

IMG_1708add 1 tbsp shallot oil (not in recipe) into a pot of water and bring it to boil
锅内倒入水,加入一大匙小葱头油(食谱外),将其烧开

IMG_1711divide dough into portions and roll into logs. divide into 7g portions
(remember to cover unused dough with warm cloth)
面团分次搓揉~取一份面团搓成长条,分割成 7克剂子
(暂时没用的面团记得盖上湿布)

IMG_1710oil palm lightly then roll each portion into a ball
press the top and bottom of dough with two fingers
手抹上少许油,将各剂子搓成小圆球
用手指从面团上下侧往内压

IMG_1715repeat till all dough is used up
如此重复直到面团用完为止

IMG_1712add shaped dough into the boiling water and stir immediately so they do not stick together
整形后的面团加入热水中,立马搅拌以避免它们粘在一块儿

IMG_1713once the abacus seeds float to the surface, it shows they are cooked
算盘子浮到水面既代表以熟透

IMG_1714drain away the water and place them into a bowl
add some oil and mix to ensure the abacus seeds do not stick together
沥干水份后勺入容器中
倒入少许油、拌匀以避免算盘子粘在一起

IMG_1716prepare all the rest of the ingredients
其余配料和食材准备好即可开炒

heat up frying wok, then add in 2 tbsp of shallot oil
热锅中加入 2大匙小葱头油

IMG_1718add garlic and fry till fragrant
加入蒜末、爆香

IMG_1719add in dried shrimps and fry till fragrant
加入虾米、爆香

IMG_1721add in minced meat and sliced mushroom
加入肉末和冬菇丝

IMG_1722stir fry till well mixed, then add in seasoning
翻炒均匀后加入调配料

IMG_1723fry till liquid starts to boil
炒至调味料开始烧开

IMG_1724add in abacus seeds
倒入算盘子

IMG_1725fry quickly to mix
add pepper to taste

IMG_1726once liquid dries up, add in fried shallots and stir fry quickly to mix
水份收干后加入加入炸葱头、快速拌匀

Personal notes/温馨小贴士:

IMG_1733– you can adjust the quantity accordingly. just note that the proportion of steam yam to tapioca flour is 2:1
食材可随意调整。芋头泥对木薯粉的比例为 2:1

– you can prepare the abacus seeds in advance. after boiling, oil and cool the abacus seeds (per instructions), then store in ziplock bag and freeze
算盘子可事先准备。根据做法将其煮熟、拌入油。待完全冷却后装入保鲜袋即可冷冻待用
