ingredients (makes 4 “hamburgers”)
hamburger batter
100g butter
75g sugar
100g egg c. 1.5 large eggs, lightly whisked
1 tsp vanilla extract
125g cake flour
1g baking powder
* sift cake flour and baking powder twice
sugar syrup
10g sugar
15g water
* simmer and stir till sugar dissolved. allow to cool
waffles sugar, chopped to bits (try to eliminate too acute edges on chopped sugar bits)
meat patty
15g butter
15g semi sweet chocolate chips, melted
some of the above hamburger batter
1 tbsp dark cocoa powder + 1 tbsp hot water (i.e. cocoa paste)
cheese and tomato
60g egg yolk c. 3 large egg yolk
25g sugar
10g cake flour
1 tbsp beet root powder (sifted) + 1 tbsp hot water
lettuce
15g sweetened flaked coconut
1/2 tbsp homemade pandan paste

蛋糕粉 125克
泡打粉 1克
*面粉和泡打粉过筛两次
糖浆

*将以上以小火煮至糖完全融化。待凉备用
华夫饼糖、切小颗粒(尽量不要切出尖头)
汉堡肉
黄油 15克
微甜巧克力豆 15克、溶化
以上汉堡包面糊、适量
超黑可可粉 1大匙+热水 3/4大匙(可可酱)
奶酪芝士片和西红柿
蛋黄液 60克、约3大颗蛋黄
糖 25克
蛋糕粉 10克
甜菜根粉 1大匙、过筛+ 1 大匙热水
生菜
甜椰丝、15克
自制班兰糊 1/2大匙
Directions/做法:
mix sugar syrup ingredients together and simmer over low heat till sugar dissolves
set aside to cool
糖浆食材混合、以小火加热搅拌直到糖完全融化
冷却备用
add pandan paste to coconut flakes
blend well
(we are doing this first so that it has time to dry out a bit)
甜椰丝儿里加入班兰糊
拌匀
(必须事先准备椰丝儿因为需要让它有足够时间晾干)
lettuce lettuce!
spread it out on kitchen table and allow to air dry
生菜生菜
散放在厨纸上、晾干
cream butter and sugar together till pale and fluffy
黄油和糖打发至蓬松、羽毛状
add egg in two additions, incorporate well before pouring in next addition
蛋液分次加入、每加入一份,拌匀后再加入另一份
stir in vanilla
拌入香草精
add in flour + baking powder in two additions
mix using low speed till batter is no longer lumpy. scrap bowl down
batter is sticky
面粉和泡打粉分两次加入
以低速拌至无颗粒、刮盆
面糊偏浓稠
spoon batter into piping bag (c. 180g) and pipe 45g batter into 4 cupcake liner
面糊勺入裱花袋(约 180克)、每个杯托装 45克面糊~共 4个纸杯
mix melted chocolate with 15g butter under meat patty ingredients together
汉堡肉里的 15克黄油和溶化巧克力豆拌匀
add the above together with cocoa paste to the remaining hamburger batter and mix well
将以上巧克力黄油和可可酱拌入剩余的汉堡包面糊
similarly pipe cocoa batter into 3 liners
同样的,将可可面糊裱入入三个纸杯
bake in centre rack of 180 degrees C preheated oven, 18 mins for vanilla cupcake and 22 mins for chocolate cupcake
(baking temperature and time for reference only)
纸杯蛋糕送入预热至 180摄氏度中层烤箱、香草杯子蛋糕烤 18分钟、巧克力蛋糕烤 22分钟

when cupcakes are out of oven, brush top of cupcake with cooled sugar syrup, then dip into chopped waffle sugar
蛋糕出炉后,在顶部刷上冷却的糖浆,然后沾上切颗粒的瓦尔夫糖
set aside to cool before slicing into half

prepare tomato and cheese batter ~ whisk egg yolk briefly
add in sugar and whisk till sugar has dissolved
(i just hand whisked throughout)

加入糖、打发至糖溶化即可

sift in flour and whisk to mix
筛入面粉、拌匀
set aside one third portion of the above batter for cheese (c. 32g)
to the remaining two third portion, add in beet root paste
mix well
将三分之一面糊分割出来~当奶酪芝士面糊(约 32克)
剩余三分之二的面糊拌入甜菜根面糊
拌匀
grease and line a 20 x 20cm pan so you have 1/3 and 2/3 portions
(note theres a division in between to prevent batter from overflowing)
spread yellow batter into the 1/3 side of the paper and the red batter into the 2/3 side
tap pan to remove air bubbles
bake in 180 degrees C oven for 6 mins
20 x 20厘米方形烤盘抹油、铺上烘焙纸~烘焙纸分割成 1/3 和 2/3 的大小
(注意~两个部位中间有明确分割以避免面糊倒流)
黄色面糊抹到 1/3那面 ~ 红色面糊抹到 2/3那面
烤盘轻拍数下以去除气泡
送入 180摄氏度烤箱烤 6分钟即可
once out of the oven, peel off baking paper and trim sides
出炉后,撕去烘焙纸、修边
assembly time~~ and the kids can help!
make sure your “burger” is sliced into half;
meat patty is sliced;
tomato is slice (cut with fluted cookie cuter);
cheese sliced into squares; and lettuce has dried (nearly dry is fine)
组合时间~~小朋友口以帮忙咯
汉堡包记得分割成半
汉堡肉切成片
西红柿切片(用波浪边曲奇模裁切出面片)
奶酪切成方形
晾干的生菜(少些水份OK)
on the bottom half of cupcake, spread some lettuce and top with one slice of meat patty
在杯子蛋糕下半部铺上一些生财、盖上一块汉堡肉
top with a slice of cheese and tomato
叠上一片奶酪芝士片和西红柿
cover with the top of the cupcake
盖上杯子蛋糕顶部
secure with wooden skewer ~ viola~~
以竹签稳定汉堡~完成!
Personal notes/温馨小贴士:
– my cupcake liner measures W 6.5 x H 3.5cm
我的纸托直径为宽 6.5厘米 x 高 3.5厘米
– if you cupcake bakes out with a protruding top, invert it once out of oven and press down slightly. allow to cool
如果烤出来的纸杯蛋糕出现尖顶,可在出炉后立马倒扣、轻轻压下,让后冷却
– you can choose to bake the meat patty in a square pan, then cut out round pieces with a round cookie cutter. i did not have a pan small enough to accommodate the small quantity of batter as i needed the batter to have some thickness. hence i baked in the liners. after slicing, try to use the middle portion of the cupcake as it is bigger in slice
汉堡肉也可用方形烤盘烤,然后用圆形曲奇模裁切出圆形面片。因为这次做的量较小,我家木有小烤盘容纳小份面糊。别忘了,汉堡肉需有适当的厚度才想汉堡肉,所以烤盘不能大。用纸托烤出汉堡肉后,切片,选用中间部位(会比底部直径来得大)
– i used a 20 x 20cm pan to bake the tomato and cheese batter. if you have a slightly small pan, feel free to use it. just remember the batter needs to be thin. the baking paper division for tomato portion is L 20 x W 10cm; and cheese portion L 20 x W 7cm (as you can see, i did not fully utilise the 20cm pan)
制做西红柿和奶酪芝士面糊时用了 20 x 20厘米方形烤盘。如果您家用小些的烤盘也可用。做出来的面糊不能太厚。铺上烘焙纸的尺寸~西红柿部份长 20 x 宽 10厘米; 奶酪芝士部份长 20 x 宽 7厘米(所以是没用上真个烤盘的哈)
– when using the cheese cut out portions, have the bottom side facing up. i realised the colour baked out on the base is sharper!
使用切片奶酪芝士时,建议将面片底部朝上。因为发现那面烤出来的颜色比较亮丽哦!
