not exactly the most traditional way of making this but when you feel like eating something, you just make use of anything/everything you can find in the kitchen
yes… putu mayam with my pasta maker! hahahaha
一种非常传统的印度小吃。。但用了灰常不传统的方式制作
我还真的是可以的了。。。是哒!制面机做 putu mayam!
牛不牛

original recipe adapted with modifications/原食谱经调整取自于: Lily’s Wai Sek Hong

ingredients

125g rice flour
1 tbsp tapioca starch
150ml boiling water * see personal notes
1 tsp salt

orange sugar
freshly grated coconut

粘米粉 125克
木薯粉 1大次
滚水 150毫升*参考温馨小贴士
盐 一小匙

赤糖
新鲜椰丝

Directions/做法

steam rice flour over high heat for an hour
粘米粉以大火蒸 1小时

 

add in tapioca starch and sift flours
加入木薯粉、将两种面粉过筛

pour flours, salt and boiling water into pasta maker and start process
please remember to loosen/separate the dough threads
(i forgot to do these as i got too excited!)
面粉、盐和滚水加入制面机,启动搅拌和压面程序
亲们压面时一定要将面条分开、拉松
(制做过程太 high 了,所以我忘了分开面条)

steam using boiling water over high heat for 5-8 mins
(i steamed for about 7 mins)
将面条饼摆入烧开水的蒸锅里以大火蒸 5-8分钟
(我蒸了 7分钟)

serve with orange sugar and grated coconut
配上赤糖和新鲜椰丝即可享用

Personal notes/温馨小贴士:

– referenced quite a few recipes and realised there isn’t a general rule of thumb to the percentage of water needed for the dough. if you reference to the original recipe, i should be use 275ml boiling water for the amount of flour i use here (if i did it, i KNOW i will get a sticky batter instead of a dough). hence, please add water according to your flour’s water absorption capability. you should get a very soft (not wet) dough. you can also check out Aunty Young’s recipe, which is slightly closer to my ingredients proportion
参考了几份食谱,发现制做这个小食并没有 “一般所需水份” 比例。如果您参考原食谱,会发现其实以我这贴子里还用的面粉重量,应该加入 275毫升开水(不过如果真那么做,我知道面粉会变粉浆啦)。所以亲们在加入水份需视面粉吸水能力哈。您也可参考安迪漾家的食谱。。会比较接近我所使用的食材比例

因用制面机缘故,所以我需要加多几勺木薯粉。制面机才“愿意”挤出面条
