250g bread flour
200g full cream milk
10g sugar
3g salt
10g butter
3g instant dry yeast
finishing
1 egg yolk
cocoa powder, sifted

Directions/做法
mix all ingredients together (except butter) and knead till you get a soft dough
(machine kneading: about 10 mins)
所有食材(除黄油)混合、和面成团

incorporate butter and knead till you get a soft and silky dough
(machine kneading: about 30 mins)
加入黄油、搓揉直到面团不沾手、有光泽
(厨师器:约 30分钟)
divide dough straightaway into 9 portions of 15g and 9 portions of 30g dough
total of 18 pieces
you will have some additional dough. just set it aside
cover everything with a greased cling wrap and rest for 10 mins
面团无需发酵、直接分割成 9份 15克面团和 9份 30克面团
共 18份
剩余的面团不要扔
所有面团盖上抹了少许油的保鲜膜、静置 10分钟
take a portion of 15g dough and shape it into a tear shape
roll it out into a 9cm sheet
取一份 15克面团、整成眼泪形
擀成 9厘米长的面片
then take the 30g dough and shape into an egg
place it on top of the 9cm sheet and flatten till about 5.5cm
再取 30克面团、揉成鸡蛋形
摆放在以上 9厘米面片上、压扁成长度为 5.5厘米的面团
seal the right side (our right) of the dough together
this forms the face of moomin
将面团右侧(我们的右侧)封口捏紧
这样就象城姆敏的脸形
roll out the leftover dough into a flat sheet
将多余的面团擀成面片
cut out triangle pieces of dough
切出三角形面片
place two together and press the bases together firmly
重叠两片三角形面片、并将底部捏扁
place the triangles behind the shaped face
将三角形面片摆放到脸形底部
flatten the ears slightly
将其压扁
cut out “hair” from remaining dough and attach between the ears (if desired)
再从剩余的面片切出须须、沾到耳朵中间的空隙当头发
allow shaped moomin to proof for about 25 mins
将整形后的姆敏发酵 25分钟
preheat oven to 190 degrees C
meantime, mix sifted cocoa powder with egg yolk
烤箱预热至 190 摄氏度
将过筛的可可粉拌入蛋黄液
draw eyebrow and eyes with a toothpick onto moomin
用竹签在姆敏脸上画上眉毛和眼睛
turn oven temperature down to 140 degrees C
bake buns in centre rack for 15 mins
烤箱降温至 140摄氏度
将面团送入中层烤箱烤 15分钟即可
note that bottom of bread is white even after it’s baked
so please do not wait till it is browned as your buns will be overbaked~!
海蒂面包烤熟后底部不上色
所以千万不可等到抵不上色再取出~~倒是面包就烤过啦

hi.im making this now…twice i make..but twice time oso the dough very sticky..it is like tat? I followed your recepi..why so sticky? Too many milk?
