120g full cream milk
80g milo powder (divided into 70g + 10g portions)
75g butter, melted and cooled
1 large egg
10g cocoa powder
180g cake flour
2 tsp baking powder
60g sugar

mini marshmallows, as appropriate (optional)

mini marshmallows, snipped into small pieces (optional)


全脂奶 120克
美禄饮料粉 80克(分割成 70克+10克等份)
黄油 75克、溶化并冷却
鸡蛋 1大颗
可可粉 10克
蛋糕粉 180克
泡打粉 2小匙
糖 60克




IMG_3786dissolve 70g milo into milk
set aside
将 70克美禄饮料粉溶入牛奶

IMG_3787sift flour, cocoa powder, 10g milo powder and baking powder into mixing bowl
add in sugar and whisk to mix

IMG_3789add all wet ingredients (egg, melted butter and milk) into dry ingredients

batter should be very sticky

fill muffin liner with batter then top with some mini marshmallow

IMG_3793top with batter right to the brim of liner

IMG_3794top batter with some snipped marshmallow

IMG_3795bake in centre rack of 220 degrees C preheated oven for 10 mins
turn turn temperature down to 200 degrees and continue baking for another 8-10 mins
(tent muffins with foil when marshmallow have browned)

    Hi Victoria, I had baked these muffins. they are awesome.
    But I baked without the 10g of milo which is not in the instruction.
    May I know when to put in?

      Hey Kin! Thanks for looking out for me! I blame that on my carelessness (I’ll spare the age this time. It got blamed too many time). The additional is to be sifted with the dry ingredients which I hv now updated in the post. Thanks for your eagle eyes

    Hi. I luv you muffin recipe so much. Now I know why my muffin never bloom. You really need a very high temp to do that? My oven is a microwave oven type that I can’t adjust the temp during baking. What’s your advice to get your same top blooming so nice. Thanks

      You need a sticky batter and high temp to get the “explosion”
