3 large eggs
1 tsp vanilla paste
75g butter, cubed
60g sweetened condense milk
50g coconut sugar ~ this is NOT gula melaka (light brown sugar OK)
80g semi-sweet mini chocolate chips
45g cocoa powder, sifted
1 tsp espresso powder (instant coffee granules OK)
60g ground almond
small marie biscuits, as appropriate

食材

鸡蛋 3大颗
香草糊 1小匙
黄油 75克、切丁
甜炼乳 60克
椰糖 50克~这个并非马六甲椰糖(黄糖 OK)
半微甜迷你巧克力豆 80克
可可粉 45克、过筛
浓缩咖啡粉 1小匙(速溶咖啡粉 OK)
杏仁粉 60克
小吗里饼、适量

line pan with foil, ensuring you have overlapping flaps
烤盘铺上锡纸、两侧需预留多余锡纸以便重叠用途

add vanilla paste into eggs and stir till well mixed. set aside
蛋液内加入香草糊、拌匀待用

add butter, cocoa powder, coffee powder, condense milk, sugar and chocolate chips into a saucepan
sitr ingredients over medium low heat till chocolate chips and butter has melted completed
remove from heat immediately
* DO NOT BRING MIXTURE TO BOIL
奶锅内加入黄油、可可粉、咖啡粉、炼奶、糖和巧克力豆
以中小火不停搅拌至到黄油和巧克力豆溶化即可
离火
* 切记食材千万不可煮至沸腾

add in egg mixture in a few additions
whisk constantly till well incorporated before pouring in next addition
ensure that mixture is not lumpy
蛋液分次加入
每加入一次蛋液需确保充份拌匀才可加入另一份蛋液
将其搅拌至无颗粒

bring chocolate mixture back to stove and stir constantly over medium low heat till you get a soft custard dough
remove from heat
巧克力糊再次以中小火加热、不停搅拌至到成卡仕达团
离火

stir in ground almonds and mix thoroughly
倒入杏仁粉、拌匀

spread a thin layer of custard onto pan
line marie biscuits on top
烤盘内铺上薄薄一层卡仕达
码上吗里饼

spread another layer of custard on top of the biscuits
line with marie biscuits once again
repeat process till you run out of custard
饼干层再次铺上薄薄一层卡仕达
码上饼干
此步骤重复至到卡仕达用完为止

img_3829cover the cake with the overlapping foil flaps and press down to compress cake
cool cake slightly then chill for at least 5 hours before slicing
将多余的锡纸盖到蛋糕上、将蛋糕压实
待蛋糕稍微冷却后,冷藏自少 5小时即可切片享用

– if you are feeling lazy, you can choose to add in the marie biscuits with the ground almonds
懒懒哒?可在拌入杏仁粉时加入吗里饼

– i used a 23 x 7.5 x 7.5cm pan this time and only made a very low cake. use a smaller pan for a taller cake or increase the ingredients to suit your pan
这次用了 23 x 7.5 x 7.5厘米烤盘,做了矮子蛋糕。如想做高些的蛋糕,可选择用小点儿的烤盘、或增加食材用量以配合各家卡盘
