剩下40克吊儿郎当的起酥油,今天干脆就将它就地正法
Ingredients
40g shortening
32g icing sugar
1.5tbsp milk
black cocoa dough
(A) 24g cake flour + 16g rice flour + slightly less than 1 tbsp of black cocoa powder
original milk dough
(B) 24g cake flour + 16g rice flour + slightly less than 1 tbsp of skim milk powder
食材
起酥油 40克
糖粉 32克
牛奶 1.5大匙
黑可可面团
(A) 低筋粉 24克 + 米粉 16克 + 稍微少于1大匙黑可可粉
牛奶面团
(B) 低筋粉 24克 + 米粉 16克 + 稍微少于1大匙脱脂奶粉
Directions/做法
– cream shortening and icing sugar till pale and fluffy
室温起酥油和糖粉打发至蓬松并发白
– add in milk in 3 additions and blend well
牛奶以三等分加入,拌匀
– divide dough into 2 equal portions and sift in (A) into one portion and (B) into another. mix well till you get a dough
以上面糊分成两份,一部份筛入(A),另一份筛入(B). 拌匀,揉成团状
– wrap both dough with cling wrap and place in fridge to rest for 30 mins
面团抱上保鲜膜,放入冰箱醒面30分钟
… and the fun begins
开始整形了哈 (´⌣`ʃƪ)
divide milk dough into 10g per cookie, and further divide this into 8g for face, 1g for nose, and the other 1 g, divide into 2 horns
pinch 3 small pieces of dark cocoa dough, 2 as ears, and the other as eye patch (no weight for this as it is too light)
牛奶面团分成10克一份:面部8克,鼻子1克,另1克分割成两只角
黑可可面团随意捏3小坨(因为份量太小,所以没记重量),2坨为耳朵,一坨为乳牛的黑纹
flatten and shape face, and place ears on top
面部面团压扁,将耳朵面团摆在头上
flatten horns and sharpen slightly with tweezers or fingers. flatten nose and attach to face
牛角稍微压扁,再用手指或捏子将它捏成尖形状。鼻子压扁,粘到面部上
repeat same process for dark cocoa dough to form eye patch and ears
黑可可面团~重复以上步骤形成黑纹和乳牛耳朵
place sesame seeds onto face to resemble eyes, and prick two holes on the nose..viola! moo moo is completed
面部上粘上两颗黑芝麻,鼻子部位用牙签捅上两个孔。。🐄就完成啦
– bake in preheated oven of 170 degrees for 11 mins or until sides begin to brown
放入预热至170摄氏度烤箱烤11分钟,或至饼干周围变金黄色即可
Personal notes/温馨小贴士:
-if you find your biscuit dough a little dry, spray a VERY thin coat of water onto the assembled biscuit just before baking
如果您发觉饼干面团偏干,可在整形后,在饼干上轻微喷上少许水再烘焙
-you will end up with more cocoa dough, so feel free to shape into other shapes as desire
做完乳牛饼干后,会留下多余可可面团 ~ 可随意整形再烤
