Jelly recipe adapted & modified from Just One Cookbook

Jelly ingredients (makes 2 glasses of “beer”)
600ml (2.5 cups) 100% apple juice
3g (1.5 tsp) agar agar powder
2 tbsp sugar

Lemon meringue ingredients
2 egg whites
50g sugar
2 tsp lemon juice
slightly less than 2 tsp of agar agar powder
4 tsp water

100% 苹果汁 600 毫升 (2.5杯)
琼脂粉 3克 (1.5小匙)
糖 2大匙

柠檬蛋白霜食材
蛋白 2颗
糖 50克
柠檬汁 2小匙
少于 2 小匙琼脂粉
水 4 小匙

– in a small saucepan, combine apple juice and agar agar powder and whisk together. bring the liquid to a boil over high heat
奶锅里混合苹果汁和琼脂粉后,以大火加热

  • once boil, turn heat down to simmer. add sugar and cook, stirring occasionally for 2 mins
    沸腾后,转小火,加入糖继续煮两分钟。之间不时搅拌

  • remove from heat and allow to cool for 5 minutes
    离火,让其冷却 5分钟

  • pour into 2 serving glasses and scoop any bubbles on surface with a spoon and discard. once the jelly cools down, wrap with plastic wrap and chill
    倒入两个玻璃杯、以勺子将表面气泡勺起。果冻冷却后,盖上保鲜膜,冷藏

  • meantime, prepare meringue by dissolving agar agar powder with 4 tsp of water. allow it to sit for 10 mins
    准备柠檬蛋白霜 ~ 琼脂粉加入4 小匙水,等10分钟,以让琼脂粉软化

  • add in lemon juice to the agar agar mixture and microwave with medium-high heat for 15 seconds, or until gelatine is dissolved
    加入柠檬汁,然后用微波炉,以中大火加热15秒,或至琼脂粉融化

  • in another bowl, whisk egg whites with 2 pinches of sugar till soft peaks. then pour in remaining sugar and continue to whisk till stiff and shiny peak form
    干净的容器中,将两颗蛋白加入两撮糖。 打至软性状态后,加入剩余的糖,打至硬性并有光泽状态

  • change to low speed to remove air bubbles
    转换为慢速,除去气泡

  • add in agar agar liquid and beat in evenly
    加入琼脂液,慢速拌匀

  • scoop over the chilled jelly, and place the glasses back to the fridge to chill till set before serving
    将蛋白霜勺到苹果果冻上,铺平后再次把果冻冷藏、待凝固后即可享用
