anyways.. in the recent months, i have received a lot of questions on painting on cakes.. if i had stencils or how i did it..
it’s all free hand.. i’m not truly good with it, but in this post, i’ll try to show you how it is done
bear with my pictures, because i had to take them, and quickly move on to the next stage

近几个月有好多网友询问关于彩绘蛋糕的尝试。。是否用了模版等等问题。。
其实,也就是拿起裱花袋,一口气涂鸦上去滴。。
今天就和大家分享这过程。。
照片儿有点惨不忍睹。。忍忍哈。。因为。。自画、自拍,需要快手快脚

Ingredients (makes an 8 inch square pan cake or a 7 inch pan if you want a taller cake)

130g rice flour
6 egg yolk
6 egg white
80g sugar
50ml coconut oil (canola oil is ok)
120ml soy milk

IMG_7709食材 (可做一个8寸方形蛋糕。如喜欢偏高的蛋糕,可使用7寸方形烤盘)

在来米粉 130克
蛋黄 6颗
蛋白 6颗
糖 80克
椰子油 50毫升 (芥花油 OK)
豆浆 120毫升

Directions/方法

  • line the bottom (ONLY) of UNGREASED pan with baking paper
    烤盘底部(就底部哈!)铺上烘焙纸。无需涂抹油。

  • roughly beat the egg yolk and add in oil. mix and then add in soy milk
    略略打散蛋黄,拌入油。拌匀后加入豆浆

  • sift in flour and incorporate till there is no more lumps
    筛入米粉,拌匀至无颗粒

  • beat egg white till stiff and shiny peak, adding in sugar in 2 additions
    糖分两次加入蛋白,将蛋白打至硬性并有光泽

  • fold in egg white into egg batter in 3 additions
    蛋白霜分3次翻拌如蛋黄湖

IMG_7694after folding in the last batch of egg white, scrap off batter from both sides of your spatula into a small bowl
拌入最后一次的蛋白霜后,将残留在橡皮刮刀两面的面糊刮入小碗里

IMG_7695sift in 1 tsp of black cocoa powder
筛入一小匙黑可可粉

IMG_7697mix well. the batter should ooze from your spoon. consistency should be like corn syrup, but not as thick
可可面糊应偏粘性,不过非浓稠。比玉米糖浆稍微稀些

IMG_7698pour cocoa batter into piping cone made of parchment or baking paper
将可可面糊倒入以烘焙纸制作的裱花袋

IMG_7699pour the remaining cake batter into pan and smooth surface with spatula
剩余面糊倒入烤盘,将表面以橡皮刮刀刮平

IMG_7700have a print out of your desired drawing and preheat oven to 220 degrees C
将心意图案打印出来,烤箱预热至220摄氏度

IMG_7701snip a very small hole on your piping cone and test on a tissue paper to make sure batter flows well
裱花袋剪下一个很小的孔,然后在面纸上试画,以确保面糊流畅

IMG_7702draw the outline of your picture
面糊先画上轮廓

IMG_7703IMG_7704then draw the finer details, controlling your strength appropriately when drawing
之后在填上细节。必要时,适当调解力度以画出细粗线条

IMG_7705lastly, write your desired words
place pan in a tray filled with ice water, wrapping base of your pan with aluminium foil
bake in preheated oven of 220 degrees C for 8 mins, and then 60 mins at 150 degrees C
remove cake from oven, and cool for 15 mins in pan before unmoulding to cool completely on rack
(baking time and temperature are for reference only)
最后写上字体 (或签上大名)
将烤盘底部裹上锡纸,摆入一个装着冰水的较大烤盘
送入烤箱,以220摄氏度烤8分钟后,转至150摄氏度烤60分钟即可
蛋糕从烤箱取出后,在烤盘里冷却15分钟在脱模,挪到冷却架完全冷却
(烤箱时间与温度仅供参考)
