ingredients (makes 6)
120g full cream milk
80g milo powder (divided into 70g + 10g portions)
75g butter, melted and cooled
1 large egg
10g cocoa powder
180g cake flour
2 tsp baking powder
60g sugar
mini marshmallows, as appropriate (optional)
finishing
mini marshmallows, snipped into small pieces (optional)

Directions/做法
dissolve 70g milo into milk
set aside
将 70克美禄饮料粉溶入牛奶
待用
sift flour, cocoa powder, 10g milo powder and baking powder into mixing bowl
add in sugar and whisk to mix
蛋糕粉、泡打粉、10克美禄饮料粉可可粉筛入容器中
加入糖、搅拌均匀
add all wet ingredients (egg, melted butter and milk) into dry ingredients
将湿性食材(蛋液、溶化黄油和牛奶)倒入干性食材
mix well
batter should be very sticky
拌匀
面糊应该非常浓稠
fill muffin liner with batter then top with some mini marshmallow
马芬纸托内勺入一些面糊。码上几颗迷你棉花糖
top with batter right to the brim of liner
勺入面糊至到填满纸托
top batter with some snipped marshmallow
面糊顶部铺上少许小颗粒棉花糖
bake in centre rack of 220 degrees C preheated oven for 10 mins
turn turn temperature down to 200 degrees and continue baking for another 8-10 mins
(tent muffins with foil when marshmallow have browned)
送入预热至 220摄氏度中层烤箱烤 10分钟
降温至 200摄氏度续烤 8-10分钟
(棉花糖满意上色后可盖上锡纸)

But I baked without the 10g of milo which is not in the instruction.

Hi. I luv you muffin recipe so much. Now I know why my muffin never bloom. You really need a very high temp to do that? My oven is a microwave oven type that I can’t adjust the temp during baking. What’s your advice to get your same top blooming so nice. Thanks
You need a sticky batter and high temp to get the “explosion”
So in order to get the explosion, min need 220 like yours right. Thanks. Never try in such a high temp before. Will need to try out..
