another “i’d always wanted to bake this” bake… this recipe has been sitting patiently in my reading list for a long long time…
Chocolate Cream Cheese Buns (recipe adapted from Table for 2 http://wendyinkk.blogspot.com/2012/12/chocolate-cream-cheese-buns-cheezy.html)
Dough
300g bread flour
30g cocoa powder
5g instant yeast
65g sugar
5g salt
1 tbsp full cream milk powder
190g water
40g butter
Filling
250g cream cheese, room temperature
50g icing sugar
2 slices of cheddar cheese, chopped
Topping (which I omitted)
1 egg, beaten
Almond nibs
- Combine dough ingredients and knead until window pane (KA speed 4 15 minutes)
- Cover and let it proof till double
- Meanwhile, mix cream cheese with icing sugar and cheddar cheese, form into 10 blobs and keen chilled until time of use
- Divide dough into 10 pcs and wrap with filling
- Place wrapped dough onto a lined tray, and let it proof for 45 minutes, until puffy and big
- Preheat oven at 180C/160 (fan)
- Brush the top of dough with beaten egg and sprinkle almond nibs over
- Bake for 15 mins or until done
For shaping of monkey faces ~
– each face is 60g – face 50g, ear 5g for each side
– shape each into a ball and place both the ears to the sides of the face and secure by sealing the seams gently
– top each dough with sugar cookie by cutting out with a cookie cutter. Place and secure on face. For cookie dough recipe, please refer to my sugar cookie recipe (http://bakingintotheether.wordpress.com/2013/04/23/animal-sugar-cookies/)
– take a bit of cookie dough, and tint with a little bit of red food colour. Punch out little circles either with a big straw or piping tip. These will be the monkey’s blushing cheeks
– roll out very very small balls of remaining chocolate dough to form the nose of monkey and secure on face
– after baking, pipe monkey’s expressions with melted chocolate
That simple huh? 🙂 so much chunky monkey in my kitchen these couple of days…. including a copycat version of Ben and Jerry’s Chunky Monkey Ice Cream ^__^
