banana chocolate cakethe weather in beijing had been lousy recently… you’d expect lesser pollution during the hols but hell.. it just got worse because of the number of tourists visiting beijing…cars.. smoke, no wind…. smog….  these are those days you just feel equally lousy but yet you just wanna bake something… and the simplest thing that came into my mind, is a butter cake ʘ̅͟͜͡ʘ̲̅

Recipe adapted from I Love Butter Cake Too 2 by Kevin Chai

Ingredients
250g butter
200g sugar
4 eggs
80g chocolate (chopped)
80ml fresh milk
250g plain flour
5g baking powder
1/4 tsp bicarbonate of soda
15g cocoa powder
200g banana (thinly sliced)
Directions

– preheat oven to 160C, grease and line a 18cm (7″) square baking pan
– melt chocolate in milk over low heat and allow it to cool before using
– cream butter and sugar till pale and fluffy and  add in eggs, one at a time, beating well after each addition
– add in cooled chocolate/milk mixture and incorporate well
– fold in sifted flour, baking powder, soda and cocoa powder
– finally add in sliced bananas into batter. spread batter into pan and bake in oven for 50-60 mins

– i baked my cake for 65 mins (somehow the middle did not get cooked)
– i topped the cake with sliced bananas half way into the baking time
