pork floss bun lion bread

haven’t made savoury bread for a while… the main reason is because the family prefers sweet bakes vs savoury…  but i presume no one can resist a nice, hot pork floss bun (ノ´ヮ´)ノ*:・゚✧

Recipe

Ingredients (makes 5 lions)

125g bread flour
10g granulated sugar or trehalose
1g salt
10g milk powder
1/2 egg (c. 20g)
2g instant dry yeast
50g water
12g butter

Directions

pork floss bun lion bread– mix all ingredients (except butter) and knead till you get a soft dough
– add in softened butter and knead till window pane stage
– proof till dough doubles in size
– punch dough down, and divide into 5 portions of 33g and 11g dough each (i.e. in total 10 portions)
– rest dough for 10 mins
– shape 33g dough into a ball, and flatten 11g dough into a 7cm disc
– brush a bit of water on the circumference of the 11g dough and place the 33g ball on top of the disc. carefully seal the sides by pressing them (the sides) down so it attaches to the disc
– allow shaped dough to proof for another 40-50 mins
– brush dough with water, and paint lion expressions with melted chocolate
– bake for 13 mins in preheated oven of 180 degrees C
– allow bun to cool, and brush mayonnaise on the sides of the lion’s face. sprinkle pork floss on top of mayonnaise
– serve warm
