it’s fathers day… the always forgotten day… i wished the hubby a happy fathers’ day and apologize they are the forgotten lot… he’d requested yesterday for a loaf of his favourite chocolate pound cake to bring to office today (yes… he’s working again) .. all you need to do is ask, right? ♪(´ε` )
Chocolate Pound Cake (apologies for not crediting the person who contributed the recipe as this was a print out)
Ingredients
1 1/2 cups butter, softened
3 cups white sugar (I reduced to slightly lesser than 1 1/2 cups)
5 eggs
2 tsps vanilla extract (I used vanilla bean paste)
2 tsps instant coffee granules dissolved in 1/4 cup hot water (i use – swear by – Starbucks VIA coffee powder)
1 cup buttermilk
2 cups all-purpose flour (I used cake flour)
3/4 cup unsweetened cocoa powder (I used Valrhona)
1/2 tsp baking powder
1 tsp salt

Directions/做法
– preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch bundt pan. Mix together the flour, cocoa, baking powder and salt. Set aside

– In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the dissolved coffee and buttermilk. Pour batter into prepared pan

– Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Let cool in pan for 20 minutes, then turn out onto a wire rack and cool completely

– i got the signature crack at the top of the pound cake after baking. But as i do not like “cracks” and plain looking cakes in general, I decorated the top with mixed nuts after baking. I piped melted chocolate and place the nuts on top of the chocolate (so the nuts will not drop as the cooled and harden chocolate works like “glue”)
我不喜欢磅蛋糕顶部的裂痕,所以用了融化巧克力将混合坚果“粘”到蛋糕上 ^_^
