ingredients (makes 6 small carp)
100g glutinous rice flour
20g wheat starch
40g sugar
50ml water
90ml coconut milk ( i used ayam brand)
orange-red food colouring
pumpkin powder
dark cocoa power
食材(可做 6小条鲤鱼年糕)
糯米粉 100克
澄面粉 20克
糖 40克
水 50毫升
椰浆 90毫升(我用 Ayam 牌)
橙红色素粉
南瓜粉
黑可可粉
Directions/做法
– sift both flour & wheat starch together in a bowl
分类食材过筛
– place sugar and water in a saucepan, and warm up using low heat. stir till sugar dissolves completely. turn off fire and add in coconut milk. mix well
糖和水倒入锅中,以小火加热、搅拌至到糖完全融化。熄火、加入椰浆,拌匀
with mixer on, pour in coconut milk mixture into flours. whisk till batter is smooth and not lumpy
将 椰/糖浆倒入分类食材、一手倒入、一手持着电动打蛋器将面糊打至无颗粒并细腻状
mix a couple of specks of orange-red food colour with some pumpkin powder
mix well with hot water to get a paste then add in a bit of the prepared batter. mix well
similarly, mix a bit of sifted dark cocoa powder with hot water to get a paste and add in a bit of batter. blend well
取微粒橙红色素和南瓜粉混合于少许热水成糊。加入一点面糊、拌匀
黑可可粉用一点热水混合后,同样的加入一点面糊。拌匀
grease carp tray (especially the tail portion!). begin by spotting the orange on the body
鲤鱼模子抹油(尤其是鱼尾部位)后用毛笔在鲤鱼身上涂上橙色
finally, pour in batter to fill the entire cavity
note: do not pour batter from head in as the batter flowing downwards may drag the painted eyes along
最后把面糊倒入
倒入面糊时尽量避免从头部倒入。如此,可避免滑下的面糊将“眼睛”一块儿拉下
– steam over high heat for 30 mins (steaming time is valid for small carp). once cooked, allow to cool completely before unmoulding
以大火将鲤鱼蒸 30分钟既可(蒸煮时间仅适合蒸小鲤鱼为准)。年糕熟透后,待完全冷却再脱模
– grease serving plate before placing rice cakes on it
盛上碟子前切记要在碟子抹上油以避免年糕沾碟哈
