mango pancakebought a tray of small tai-nong mangoes (heard from someone they are the sweetest mangoes ever) from the supermarket recently…. was wondering what i should do with them when i remembered a popular dessert that the famous dessert chain Honeymoon serves.. the mango pancake! it seem that this is a widely made dessert.. i was wondering what made me wait so long to make this… it is truly yummy…..

Ingredients mango pancake

250g milk ( I used almond milk)
80g cake flour (I used 70g cake flour + 10g corn starch)
2 eggs (or 4 egg yolks)
20 + 30g caster sugar
15g canola oil or melted butter
1 big mango (I used 4 small mangoes)
200g whipping cream
1tsp lemon juice (optional)
* i added 1/2 tsp vanilla extract

Directions
– sift flours into milk and mix well
– add 20g sugar into egg and beat till well incorporated. Add egg mixture into flour/milk mixture
– add oil and vanilla essence and mix well
– sieve mixture into another bowl, wrap with cling wrap and chill for at least 30 mins
– after 30 mins, heat a non-stick frying pan on low heat. Lightly grease the pan
– (i sieved the mixture again)
– add about 3 tbsp of mixture into pan and very quickly, lift the pan up and swirl the pan to spread the batter till the batter begins to firm up
– i cooked each pancake about 1-2 mins (you only need to cook one side of the pancake.. the top side should not be flipped and fried)
– carefully remove pancake by removing the sides first with a chopstick (i used a satay stick) then use a big spatula or wooden spoon to place it onto a cooling wrap (cover with cling wrap)
– proceed to cook other pancakes till mixture is used up (remember to cover each pancake with cling wrap after removing from pan. Pancakes can be stacked up together)
– leave pancakes to cool
– add 30g sugar to whipping cream with lemon juice and whip till stiff, sharp peaks
– remove skin from mango and slice mango into cubes
– after pancake has cooled, spread a bit of whipped cream to the center of the pancake (i used one ice cream scoop). Top with mango and spread another layer of whipped cream on top of mango (please note that the browed side of the pancake that has been fried should be on the inside of the pancake)
– fold the pancake beginning from the bottom up, then top flap down. then close the sides, and place pancake carefully on a plate (seams sides down)
– chill before serving
