teddy bears always liven up the dining table don’t they? the tasters said this mantou is very soft.. unlike the store bought mantous!
Ingredients (makes 10 teddy bears)
one portion of brown sugar mantou dough
285g all purpose flour
3g instant dry yeast
30g brown sugar
150g water
pinch of salt
10g salad oil
30g of following original mantou dough
285g all purpose flour
3g instant dry yeast
30g caster sugar
150g water
pinch of salt
10g salad oil
melted sweet chocolate for piping expressions
Directions
– mix all ingredients together except flour in mixing bowl. Incorporate well then sift in flour
– knead dough till it is soft and shiny
– cover bowl with damp cloth and allow to proof for 30 mins. repeat same process for both doughs
– after proofing, divide brown sugar dough into 10 portions of 37g ball (head), and 20 portions of 8g dough (for ears)
– attach ears to head. Prepare 10 x 3g of original dough, flatten each dough into a disc and stick to bear’s face. Using remaining brown sugar dough, divide into 10 equal portions and attach to teddy bear’s face. This will be the nose
– cover with damp cloth, and rest for 30mins
– place 2 cups of hot water into steamer, and steam bears for 25 mins
– once cooled, pipe expressions onto bear’s face
Personal notes:
– i used cake flour in place of APF
– i made half recipe of original dough, pinched a handful and “tinted” it with extra dark cocoa powder. Eyes and nose are made of chocolate coloured original dough
this is probably one of the better mantou recipes i ever tried…. do give it a go ⁝⁞⁝⁞ʕु•̫͡•ʔु☂⁝⁞⁝⁝

sorry, i don\’t understand quite well, there are ingredients mentioned (one port portion …….. and 30g….) is it the same??
hello Veronica,u see, the bear is made up of 2 portions, brown, and white (for the nose) ya? the recipe gave the ingredients for the brown sugar mantou. however, as the nose requires only 30g of white/original dough, its difficult to just make 30g of original dough. so the book gave the recipe for an entire original mantou dough, of which you will need only 30g. meaning, you will have some spare original dough which you can just shape into mantou and steam away..
