IMG_6021taking a brief break from the CNY goodies baking today because i need to clear out my fridge…

Recipe adapted and translated from Qi Qi in the House

Ingredients/食材 (makes six 60g buns)

IMG_6018180g hong kong flour (all purpose flour is fine)
20g wholemeal flour
3g instant dry yeast
pinch of salt
100g fresh milk
35g caster sugar
1tbsp lard

3/4 tsp double action baking powder

240g red bean filling (divided into 6 portions of 40g)

水仙粉 180g(亦可用中筋面粉)
1 tbsp

IMG_6020– mix all ingredients (EXCEPT BAKING POWDER) and knead for 8-10 mins till you get a soft and non-sticky dough

– allow to proof in room temperature till double in size (around 1 hour)

– mix baking powder with 1 tsp of water and dissolve. add it to the above dough and knead till well incorporated

– rest dough for 15 mins

– divide dough to 6 equal portions (60g each) , shape into a ball and roll into a disc. place filling and seal seams

– place buns into steamer and allow to proof for 45 mins

– steam buns on medium-high heat for 15 mins

– once time is up, do not open lid immediately. allow buns to sit in it for a while as a rush of cold air will cause the bun to wrinkle

Personal notes/

IMG_6016– i halved the recipe and make six 30g buns

– shape cat according to following diagrams after placing filling and sealing seams

NA201401061531320067-02-091000000punch a dimple on both sides of the dough

NA201401061531570090-02-091000000“affix” pinchful of dough into the dimples and make impressions on the ear with fondant modelling tools

NA201401061532230045-02-091000000next, use the base of a large piping tip to make quarter circles as impressions for the eyes

NA201401061532420026-02-091000000this is what you should get

NA201401061533090086-02-091000000make a small dent on the face

NA201401061533320036-02-091000000… and place a red bean on the dent. this will form the nose. i’d have used azuki bean instead of raw red bean but i ran out of it

NA201401061533540038-02-091000000finally, draw expressions with cocoa batter (mix egg yolk with a tsp of cocoa powder) using a toothpick

    Hi XXX,

We recently came across your Fat Cat Steamed Wholemeal Red Bean Bun and would love to include it in a feature we\’re doing called Cute Christmas snacks for cat fans on the Sainsbury\’s website –

We would feature the image on the site along with a credit and link back to your blog where the user could then find out the recipe.

Could you please let us know whether you are happy for us to use your image?

    Many thanks,
