IMG_6520madeleines are something i had wanted to bake for a long time ~ but since i don’t have the mould, i’d never gone into baking it… and since i don’t bake it, i never gone about buying the mould (*-ω-)… sigh… chicken and egg thing… 。。 so yes, i confess, this is not baked in a madeleine mould… i love this recipe because it is sooo fast.. like 30 mins from preparation to serving ༼ (´・ω・`) ༽

Recipe adapted from Cooking Channel

Ingredients (makes 12)

1 cup plus 2 tablespoons (or 150g) flour
1/2 teaspoon baking powder
Pinch salt
2/3 cup plus 1 tablespoon (or 150g) butter
1/2 cup plus 2 tablespoons (or 125g) sugar
1 tablespoon brown sugar
1 tablespoon honey
Zest of 1 lemon
4 eggs

IMG_6523– Grease madeleine tins and set in the freezer. Heat the oven 400 degrees F/200 degrees C

– Sift together the flour and baking powder

– In a small saucepan melt the butter, and stir in the sugar, honey and lemon zest

– Lightly beat the eggs, and temper them into the butter mixture

– Whisk into the flour to make a smooth batter

– Pour into the molds and bake until the cakes are puffed up, golden around the edges and cooked through, 10 to 12 minutes, without opening the door during cooking

Personal notes/

IMG_6522– i halved the recipe and made 6 madeleines. i used coconut sugar and orange zest for the recipe

– i do not have a madeleine mould and used a normal lemon shaped pan to bake these

– i baked mine for 13 mins

– kiitori’s expressions are decorated with melted dark chocolate and orange chocolate pen
