Recipe adapted from my lemony kitchen

Ingredients (makes about 70 pieces)

150g margarine
80g icing sugar
50g corn flour
80g custard powder
120g plain flour
1 egg yolk
glaze cherries – chopped

IMG_8512食材(可做 70颗曲奇)

IMG_8516– fry corn flour, plain flour and custard powder in dry wok over low heat until the mixture is light and leaves the side of the wok * this took me around 6 mins. set aside to cool

– beat the margarine and sugar till creamy and add in egg yolk. blend well

– fold in flour and mix till you get a dough

– squeeze cookie dough out using the samperit nozzle (please click on lisa’s for picture of this) and top dough with cut up cherries * i rolled my dough out to 0.6 cm thickness and cut out using love shaped cookie cutters. using stencils, i brushed dark cocoa powder onto the cut out cookies

– bake for 15-20 minutes in preheated oven of 120 degrees C * i baked for 20 mins in 160 degrees C. if you find your cookies puffing up with cracking surface during baking process, remove it briefly from oven and let it cool for a few mins before putting it back to bake
